Start the Season with this Healthy Recipe and Venture into a Fantastical Young Adult Read this Fall...

I discovered this healthy recipe from an online diet and exercise program I purchased last year and loved it! It packs a different punch to your taste buds while providing a healthier choice to add to your personal menu. Who said a burrito needed to be unhealthy? This easy recipe provides anti-inflammatory properties from apple cider vinegar, immune boosting benefits from garlic, and healthy, inflammation-cooling fats from olive oil. Instead of heading to your local fast-food Mex-Tex joint, try making your own burrito at home.

Chipotle Chicken Wrap

1 garlic clove
1 tbsp. olive oil
1 tsp. chili powder
1 tsp. apple cider vinegar
Juice from ½ lemon
Pinch of salt and pepper
½ tsp. paprika
4-6 oz. boneless, skinless chicken breast, diced
1 cup romaine lettuce or spinach, chopped
1 tbsp. shredded carrots
½ cup quinoa, cooked, optional
Sliced avocado, optional

Salsa

½ tomato, diced
¼ onion, diced
2 tbsp. chopped cilantro
Squeeze of lemon juice
Note: you can use your favorite brand of salsa if you choose

Make your chipotle sauce first by blending blend together garlic, olive oil, chili powder, vinegar, lemon juice, paprika, salt and pepper until smooth (ideally in a blender). Use this sauce to marinate your chicken in a zip lock bag for a minimum of 30 minutes.

Mix together all of your salsa ingredients in a bowl.

Cook the chicken in a sauté pan until thoroughly cooked through, about 10 minutes.

Serve on a bed of lettuce with chicken and salsa on top. Add cooked quinoa and/or avocado if desired.

While you’re waiting for your healthy wrap to digest why not put your feet up and relax on the couch with a good book? May I suggest a visit to Fairy Falls, or if you’re feeling really adventurous, a trip back in time with The Last Timekeepers? Whichever you choose, either series will transport you to another time and place, taking you away from whatever troubles you.

Here’s a glimpse of the premises of both my young adult series:

Off to a Good Start this Upcoming Fall Season With a Plant-Based Diet by Author Alicia Joseph...

Today is the first day of eating nothing but plant-based food for thirty days. I’ve been a vegetarian for about eight years, and then turned to veganism not too long ago. So, although I eat a lot of fruit and veggies, I am sure that I indulged way too much in my favorite vegan junk food. I’m looking straight at you Beyond Meat! Though I had always tried to balance the number of processed foods I ate with more healthy foods, I no doubt overdid it with the delicious brands of everything vegan – ice cream, pizzas, burgers, sausages, corndogs, chicken nuggets…I think you get the idea.

In 2006, I was diagnosed with Myasthenia Gravis, a neuromuscular disorder that leads to weakness of the skeletal muscles. The first seven years were pretty hard, but the last eight years have been quite bearable without any serious flareups, until recently. I believe food is the medicine that keeps our bodies in optimal health. I hope the negative effects I feel from my disease will motivate me to stay on course and eat strictly 1 plant-based diet. I didn’t weigh myself before I started. This change is more about feeling better than losing weight, but yeah, I’m hoping for that too.

I have a pre-planned list of recipes I jotted down from a plant-based cookbook written by Dr. John McDougall, The McDougall Quick and Easy Cookbook, that should cover me for a couple of weeks. My fridge is stocked with all the healthy deliciousness of natural and unprocessed foods. The key is staying organized and having a meal plan.

Today’s meal was a simple carrot, celery, kale, and noodle soup followed by black bean sloppy joes over roasted potatoes.

One day down. Twenty-nine to go. Easy peasy.

Here is a glimpse into one of my books. I hope you enjoy it.

“When a train runs over a penny, the penny changes form, but it can still be a penny if I want it to be. Or, I can make it be something else.”

Lyssa and her best friend Abbey discover a hideout near the train tracks and spend the summer before sixth grade hanging out and finding freedom from issues at home. Their childhood innocence shatters when the hideout becomes the scene of a tragic death.

As they’re about to graduate from high school, Abbey’s family life spirals out of control while Lyssa is feeling guilty for deceiving Abbey about her sexuality.

After another tragic loss, Lyssa finds out that a penny on the track is sometimes a huge price to pay for the truth.

Guest Post: Beyond the Simple Bio by Young Adult Author Leigh Goff...

I am a young adult author with type 1 diabetes. Why is that little fact important? Maybe it isn’t, but it has shaped me as a writer, a mother, and a person, whether I wanted it to or not. I didn’t by the way. I have never shared this publicly as I am a very private person. However, this is important because I’m not the only person dealing with type 1. You see, my younger brother had been diagnosed at the age of fifteen with the same disease. I watched how it ravaged his body over a short period of time. I saw firsthand how it attacks—one tiny blood vessel at a time until there’s nothing you can do to reverse the damage. I also remember quite clearly my mother being afraid to help him. He was on his own and terrified.

Eight years after his passing, I was thirty-one, active, slender and continuing to lose weight even though my weekly running had slowed. I had developed an unquenchable, burning thirst, my fairly good vision was growing blurry, and my strong legs were cramping in the middle of the night. I knew in my heart what it was. I’d seen the symptoms in my brother a decade earlier. After three months of denial, I went to the hospital where I was diagnosed with what the doctors’ thought was type 2 diabetes. They explained I was too old to have type 1.

However, I was running twenty miles a week. I kept asking myself, “How could it be type 2?” My husband told me he could see how thin I’d gotten and was concerned the doctors were wrong. They insisted and put me on an oral medication that clearly wasn’t going to work. It didn’t. The antibody test came back positive and the fact was, my immune system had turned on me. The insulin producing cells in my pancreas were destroyed and would never return.

It was a death sentence as far as I knew. I, too, was terrified. I had a husband and two young children. I had a life I wanted to live for as long as I could. I knew the chronic disease would kill me, if I let it. If I let it. So, I committed to not let it destroy me like it had with my brother. I’m not kidding. I was scared to death, but the disease that had taken him wasn’t going to take me.

I went to my medical appointments, feeling so desperately alone. I also went to support meetings at my local hospital, which were actually the opposite of support. There I met with fellow type 1 patients who had refused to accept the disease and its mighty power and that scared the hell out of me. They hadn’t seen what the monster could do. After two meetings, I never went back. They seemed to be in denial and denial was not an option for me. If I encountered another type 1 at a social event, I latched onto them like they were a life raft, but none of them seemed to be on the same path as myself. I acknowledge that everyone with the disease has to come to terms with it on their own and figure out their own plan.

My plan was to respect the monster, and in return my diligence would keep the monster at bay so as to allow me to live as normally as possible. Day by day. Some days great. Some not so great. But good health was and continues to be my goal.

I started my healthcare regimen with old-fashioned syringes and vials, moved on to insulin pens, and finally graduated to wearing top-notch medical equipment in the form of an insulin pump and a CGM (Continuous Glucose Monitor) in one of arms (I switch it to the other arm every ten days). After almost twenty years, the last ten with tubes and gadgets attached to me, I’m pleased to say I have no blood vessel damage to my eyes or kidneys. This is my life. For the rest of my life, but I’m thankful to have the technology to maintain my good health and I’m most thankful for the years my brother didn’t have.

Am I scared? Every single day I wake up summoning courage to face the day. Type 1 is truly a monster that never quits. I’ve dealt with other beasts in my life, some of them in my own family, but this monster is a killer waiting to snatch another victim. However, like in a fairytale the point of a monster is that it is meant to instill fear and test the hero. Will the hero face her fear and defeat the it? In my own story, I have faced my fear, my greatest fear, but until they find a cure for type 1 diabetes, I won’t be able to defeat it. In the meantime, I will continue to battle it every single day with strength and steadfastness.

As far as writing, I’d love to craft a story that features a character with type 1. In the meantime, I am inspired by caffeine, enchanted spells, and unforgettable, star-crossed fates. Although I'm terrible at casting any magic of my own, I am descended from an accused witch, Elizabeth Duncan of Virginia, who went to trial in 1695 for charges including bewitching livestock and causing birds to fall from the sky. That’s pretty cool, right?

I am currently taking a charcoal drawing class and golf lessons to bring some new experiences to my writing. We'll see how that goes! I have three published young adult novels, I am a member of SCBWI, and I graduated from the University of Maryland.

At present, I am working on a manuscript about a teen witch, Abigail, fighting for her right to practice witchcraft in a conservative southern town with a history of burning witches. As she finds herself irresistibly drawn to the tale of the Silver Moon Witch, trouble begins to find Abigail who's discovering the witch's story has dangerous parallels to her own life, especially when someone is watching, waiting to toss a match.

THE CHEESIEST SPINACH CASSEROLE

This is a healthy, low carb casserole that I enjoy making and it doesn’t raise my blood sugar levels!

20 oz. frozen spinach, thawed and squeezed dry
4 oz. cream cheese, cut into small cubes
1½ cups shredded Monterey jack cheese
6 slices bacon, fried and crumbled
4 large eggs, beaten
¼ cup butter, melted
2 cloves garlic, minced
½ tsp. salt

Preheat oven to 350 degrees.

Add all of the ingredients to a large mixing bowl and stir well to combine.

Spread mixture into an 8x8 baking dish and bake for 35-40 minutes or until the edges are golden and the center is set.

Serve immediately.

Recipe from THAT LOW CARB LIFE

Here's a brief intro to Leigh's latest novel. Hope you enjoy it.

Koush Hollow
Where bayou magic abounds and all that glitters... is deadly.

After her father’s untimely death, Jenna Ashby moves to Koush Hollow, a bayou town outside of New Orleans, dreading life with her wealthy mother.

As the sixteen-year-old eco-warrior is introduced to the Diamonds & Pearls, her mother’s exclusive social club, she comes to the troubling realization that secrets are a way of life in Koush Hollow.

How do the Diamonds & Pearls look so young, where does their money come from, and why is life along the bayou disappearing?

As Jenna is drawn into their seductive world, her curiosity and concerns beg her to uncover the truth. However, in this town where mysticism abounds and secrets are deadly, the truth is not what Jenna could have ever imagined.

Pollution Solutions - Let's Detox by YA Paranormal Author Leigh Goff...

Photo by Jacek Dylag on Unsplash
“Sip a glass of cool, clear water as you read this, and you may think water pollution is a problem somewhere else. But while most Americans have access to safe drinking water, potentially harmful contaminants — from arsenic to copper to lead — have been found in the tap water of every single state in the nation.” (1)

When we think about detoxing, we think about our health. However, our rivers, lakes, and oceans are in trouble just as the lake and bayou in KOUSH HOLLOW (my soon to release novel) and none of us, including my fictional characters, can be healthy without clean water.

Water pollution comes from things like pesticides, farm waste, oil spills, and industrial and radioactive waste. Radioactive disasters like what happened at the Fukushima Daiichi Nuclear Power Plant in Japan can send hundreds of tons of radioactive water into the sea before leaks can be contained. For marine life, radioactive pollution can kill fish, create strange mutations, and the poison can be passed along the food chain. According to the EPA, almost half of our rivers and more than one-third of our lakes are polluted, which means they’re not safe for swimming, fishing, or drinking.

In KOUSH HOLLOW the locals believe the town’s lake is polluted from sewage and wastewater, but the dirty secret is that the pollution is coming from a nefarious source. The effects are disastrous on life in and around the lake and bayou. The main character, Jenna is vigilant and curious. Her suspicions lead her to uncover the corruption at the local nuclear power plant. Then Jenna starts up the Green Eco Warriors who pick up trash around the lake and send in water samples for testing.

In the real world, we can all be vigilant and do our part, even if we don’t live near a lake. We can reduce our dependence on plastic. Properly dispose of toxic chemicals, petroleum products, and old batteries to keep those chemicals from seeping into the groundwater. If you’re not a vegetarian/vegan consider implementing a no-meat Monday to reduce meat consumption, which will reduce agricultural demand, and in turn reduce farm waste. When you’re ready to purchase a car, consider buying an electric car that doesn’t use oil, antifreeze, or gasoline. “Nearly one million tons of oil makes its way into marine environments each year.” (2) If needed, use natural fertilizers, pesticides and herbicides in your yard and consider planting native species of plants that will soak up rain and prevent runoff. Our waterways touch all of our lives. Let’s keep them clean!

Recipe and a Read: Summer Smoothie and Self-Care by Certified Nutrition Consultant Gina Briganti...

After trying every protein powder in the health food store and in my Urthbox delivery for the last three years, I know this is the best. Why? It’s organic. It’s hemp, which is a known superfood for its complete protein profile. It’s 100% hemp protein, no sugars or flavors added. I love the grind they use, which isn’t too fine, the way you often see with rice protein powder, which means that it blends well and has a nice texture. More bonuses – widely available, gluten-free, dairy-free, and there’s no bitter taste like you see with rice protein powder or pea protein powder.

Here’s an easy recipe to try out. Once you know the basics, you can take your smoothies as far as your imagination will go.

Freeze the strawberries if you want a chilled smoothie and freeze the banana, too, if you want an icy smoothie.

Banana Berry Smoothie

1 banana
1 cup strawberries
1½ cups milk of your choice, but one with protein*
¼ cup Nutiva Organic Hemp Protein Powder

Put the fruit into the blender cup. Add protein powder. Then add milk. If you like a thinner smoothie, you may want to add more milk at this point.
Blend for 45 seconds. Enjoy!

*We use Trader Joe’s Simply Almond and Good Karma + Protein. Both are unsweetened. If you use animal-derived milk, buy organic, grass-fed, and raw, if the laws where you live allow for it. If not, get as close to that standard as you can.

One handy reason why smoothies became and stayed popular is how versatile they are. You can put supplements in and never taste them. I use MSM powder (known for its bitter taste and for its effectiveness) for inherited arthritis. It helps me use my hands all day long without painful, forced rest breaks. Another supplement I put in my smoothie is liquid iodine, which I personally have a high need for to keep my thyroid happy.

Smoothies are fast, easy, and delicious. Pro tip: use only the best ingredients. The fewer toxins you take in, the fewer you have to detox. This way all the good stuff works extra well to give you longevity, happy taste buds, and the freedom to satisfy your cravings.

I have a delicious mocha smoothie recipe. If you want to see it, comment and I will share.

Do you have a favorite smoothie combination?

Writers Living Right…

I'm ready for my walk!
Writers are mostly on their butts doing what they love to do, but our bodies were made to move. I used to write first thing in the morning to get my word count, but as the day blossomed, exercise went on the back burner. So I kick-start my day by either doing free weights, abdominal exercises, and push-ups, or riding on my stationary bike for 25-30 minutes. There’s an added bonus for exercising on the bike—I can read from my TBR pile!

Once the exercise routine is done in the morning, I feel recharged and ready to start the rest of the day writing, planning, marketing, or promoting my books. I still try to get up and stretch every 30-45 minutes, and then there’s my faithful companion—a spoiled yellow Labrador—that insists he be walked every day at 2 pm sharp. That’s non-negotiable.

Another healthy lifestyle tip for writers is to take breaks throughout the day. The truth is—we all need to periodically step away. We skip breaks in the name of “getting one more page written,” but when we don’t break from our work, our productivity suffers. We lose focus. We start making small mistakes and even forget things altogether. Our bodies have a natural ebb-and-flow response to stress that allows us to work hard and then relax and recover. The problem comes when we chronically trigger those responses. We become all flow and no ebb, and you can only cheat the system so long before it becomes counterproductive. Set a timer if you must, or download an app that will remind you to pull away from your task, but for the sake of your health, give yourself a break!

Your friendly reminder...
Want another reason to rest and recharge your writing muscles? I find if I overuse my computer mouse—whether writing a novel, editing, blogging, or engaging in social media—my wrist starts to throb. Then I know it’s time to put on a wrist brace, and rest my hand as much as possible. Or switch up and use my other hand! Eye strain happens more when I’m revising and proofing. Sometimes I use an eye patch to give my sore eye a rest. The one thing writers don’t want to screw around with is the health of their eyes. So take frequent breaks when proofing or editing. Your eyes will thank you. The key for me is that as a writer, I’ve learned to listen to my body. I stop if it hurts. I rest. Stretch if I need to release the kinks. It’s pretty much all common sense.

One more thing. Hydrate, hydrate, hydrate! Your body needs lubrication. Water massages your major organs, flushes toxins from your body, increases energy and relieves fatigue. And if that wasn’t enough to get you periodically up out of your seat to go grab a glass or bottle of water, drinking enough water can also help with weight loss. A bonus for any writer who doesn’t want to drag around that secretarial spread behind them. So, drink to your health, and bottoms up!

What do you do to recharge your batteries throughout the day? How often do you take a break? If you’re a writer, what are you doing to promote health and well-being in your life? Would love to read and respond to your comments! Cheers and thank you for reading my post!
