Recipe and Read of the Month by Susan Lodge...

The last long weekend is almost here, so I've invited author friend and Regency maven, Susan Lodge to share a dish that can be cooked ahead of time, and whisked away to your cottage, camper, or family gathering. This recipe makes two generous portions, so double or triple up if your planning on serving extra bodies. It’s nice served with a green salad and some crusty bread. A little red wine is a bonus. Enjoy!

Easy Tomato & Bacon Pasta Bake

4 rashers (slices) thick bacon, chopped into bite-sized pieces
1-2 tbsp. olive oil
300gm (10oz) dried pasta shapes. Penne works well.
1 large onion, chopped
3 garlic cloves, crushed
400gm (14oz) tin of plum tomatoes, roughly chopped 125 ml (4oz) red wine
Small bunch of fresh basil leaves, roughly chopped Salt and pepper to taste
110 gm (4oz) Parmesan cheese, grated, or mozzarella, sliced 

PREHEAT oven to 180C or 350°F.

FRY bacon in a little oil and put aside.

COOK the pasta in boiling water for the prescribed time on the packet.

IN a large pan gently fry the onion and garlic in olive oil for a few minutes until soft and transparent. 

ADD tomatoes, wine, cooked bacon pieces, and most of the chopped basil (retaining a little for garnish). Season well with salt and pepper.

SIMMER gently for five to ten minutes until the sauce has thickened slightly.

COMBINED the drained pasta and tomato mixture and turn in to an ovenproof dish.

SPRINKLE with cheese and scatter the remaining basil on the top. Bake for 10 to 15 minutes, or until the cheese is melted and bubbling.

POUR yourself a glass of wine, relax, and enjoy a peek at my latest Historical Romance while dinner is baking.

“If Vizan is not well enough to come, then you must. Kalis is frantic,” he said. He rubbed a paw over the brown fur on his snout and I noticed that the skin beneath bore a pattern of red marks.
Vizan coughed and I set the beaker down, wiping his mouth with a cloth. Once I’d tended to him, I raised a paw to point at Morel’s sore nose. “Kalis bit you?”
“It’s just a nip.” Morel gave the marks another rub, then put his paws behind his back as though to keep them as far from his injury as possible. “My own fault. Kalis ordered me to fetch the Fate-seer right away, and I was foolish enough to say that Vizan wasn’t well.” His claws made a regular ‘pitter-pit’ sound against the uneven stones of the floor as he wiggled his toes, and I smelled impatience mingled with anxiety. Clearly he had no wish to incur more of the Prime’s displeasure by returning without a Fate-seer.
Neither did I. But…
“Kalis won’t want me praying over his egg. Vizan was his sire’s Fate-seer and his grandsire’s. I’m just an apprentice.”
“No!” Vizan’s voice was little more than a thread, but there was surprising strength in his wrinkled paw as he clutched my arm. “You must go, Zarda. You have the Sight. You are the Fate-seer now. Go! Go with Morel…”
“Vizan…” I hesitated, too afraid to voice the questions that had been gnawing at my thoughts since the Prime’s egg was laid: What if the hatchling is like the others? What might happen if he, too, is crippled?
It wasn’t a question I could have imagined asking a couple of moons ago. The sun shone by day, the Spiral watched over us by night, the moon waxed and waned every fifty-four days, and every drax could fly. Even after the Sickness had taken so many in the growing season, there had been no reason to imagine that the survivors would face the horror of hatching deformed offspring from their late batch of eggs.
Vizan seemed to sense what I couldn’t put into words and his grip on my arm tightened. “We Saw him, Zarda,” he croaked, “in the Dream-smoke.” He coughed, and his next words came in ones and twos, forced out between snatched breaths that rattled in his chest: “The Visions…are never wrong…never.”
I could see he was trying to set his ears upright to indicate his sincerity, though he was now so feeble they did little more than twitch. “This hatchling…will lead…victory…over the…Koth.”
I glanced up at Morel and saw my own doubt reflected in the set of his ears. The mountaindwelling Koth had raided and pillaged our farms since the Spiral first shone in the sky. It was true that I’d shared Vizan’s astonishing Vision, but still I had trouble accepting it as fact.
Vizan must have sensed my doubt. “You Saw it too…we both Saw.” He began to cough, and I reached again for the beaker, but he waved a paw toward the door and I read anger in his one open eye. “Put on the badge. Go!”

Guest Post: What Fashions Your Fiction? by C.D. Hersh...

We’re talking about things that have lead us into the paranormal genre. What happened in our past that led us to be interested in writing our series, The Turning Stone Chronicles?

Catherine’s mother loved good old fashioned monster and horror movies. In fact, she got so scared watching a monster movie when she was pregnant with Catherine that she got goose bumps. Later, when Catherine developed what appeared to be permanent goose bumps on her arms, her mother said she had “marked” her by watching such a scary story during pregnancy. One could say, based on this story and the old wives’ tale her mother’s explanation came from, Catherine’s destiny to write about the paranormal developed in the womb. In reality, the steady diet of supernatural themed movies and television shows she viewed as a youngster had the biggest influence. Vampires, werewolves, things from outer space, Frankenstein, zombies and ghosts whetted her appetite for the paranormal and made her run like mad past the graveyard when she had to walk home in the dark, wear a cross at all times, and avoid going out alone on a full moon. Thanks Mom.

Her grandmother also contributed to Catherine’s taste for fantasy. Grandma’s favorite scary story, which she told to her grandchildren at nearly every visit, was about an old woman who accidently dug up a monster’s big toe, while hoeing her potatoes, and ate it for dinner. (Why the toe was not attached to the monster is lost somewhere in Catherine’s memory, but the gist of the story remains.) The monster, naturally, was upset and haunted the woman every night, moaning, “I want my big toe.” The haunting drove the old lady crazy and the monster gobbled her up in revenge. Catherine also reread Mary Poppins and Grimms Fairytales, two of the books on Grandma’s shelves, every time she visited.

And of course, we can’t forget Walt Disney. His romantized tales of fairy godmothers, men under curses who could only be released by true love’s kiss, and evil witches have primed children everywhere to love the paranormal. Catherine was no exception.

Aside from his science-fiction fantasy Tom Swift books, Donald’s other genre influences have been television shows like The Twilight Zone and comic books—a reading choice of many boys. His favorites included supernatural heroes like Superman, Flash Gordon, Green Lantern, Wonder Woman, Aqua Man, and the Justice League of America. Lois Lane, with her unrequited love for Superman and inability to see the value of Clark Kent’s love, influenced his taste for romance. Donald also attributes his foray into the paranormal to Catherine. Having spent two-thirds of his life with her makes it hard to ignore what she’s interested in … and makes him a smart man for paying attention.

Celebrating #Windsor Writers: Behind the Scenes with Author Sharon Ledwith…


My writing process is always the same for every book. First, I start with the characters and build the story around them. The characters, my characters, must carry the story to completion, give readers closure. It’s a must. In order to do this, I begin writing out character tracking sheets (stats on characters’ appearances, clothing, likes and dislikes, etc.) which have served me well throughout the writing process. Then the fun begins. Research, research, and more research. I love this part of the process too. In the case of Lost and Found, the first book in a planned five book teen psychic mystery series entitled Mysterious Tales from Fairy Falls, I had to do a lot of research on the psychic ability of animal communication, as well as read a lot of animal behavior books and blogs. Each book in this series is a stand-alone project with a different cast of characters, one of whom possesses a unique psychic, supernatural, or prophetic ability.

The soul of Lost and Found was born out of my firsthand knowledge and experience working as an animal care attendant at a northern animal shelter during 2007-08. I found myself wondering what the cats and dogs would say to us humans. How would they act and sound? What did they really think of humans? So, chasing down the animal voices frolicking in my head, I wrote their story. All the shelter animals in Lost and Found are based on an animal I cared for in some capacity at the shelter. Now, trying to come up with each animal’s unique voice wasn’t that hard for me, since I went by the personality of the cat or dog. I observed certain quirks, how each animal behaved, what were they afraid of, what they liked, and so on. What I found was that every animal (even kittens born in the same litter) was different. Just. Like. People. When I was ready to sit down and write their story, I compiled a list of shelter animals that readers would emotionally relate to and connect with. Many came to me as a surprise, others were firmly planted in my imagination from the very beginning.

Once I gathered enough facts, and felt that my characters were sufficiently fleshed out, I sat down and created the setting—Fairy Falls—which is the backdrop that glues this series together. I actually based this fictional tourist town on the area where I was living in at the time. Write what you know, right? You see, for over eleven years we lived on a medium-sized lake in the heart of cottage country. So I took in the sights, smells, sounds, tastes, emotions, and feelings of this beautiful place, and added the challenges and obstacles of what it would be like for an uprooted teenager possessing a psychic ability to adjust to the day-to-day living in Fairy Falls. Meagan Walsh, the protagonist from Lost and Found tells us what she thinks of Fairy Falls right off the bat: “This town sucks!”, and she goes on to describe it as ‘a small, boring northern tourist town’. If only Meagan knew what life had planned for her in this magical place!

Indeed, Fairy Falls could be any small tourist town that you may have visited during your youth (or adulthood) that invokes happy memories and simpler times. I wanted these feelings to emerge for the reader, and make my characters realize that there truly is no place like Fairy Falls. The town itself hosts a number of stores, services, and inhabitants that you’d be familiar with when visiting any small, tourist town. There’s a real estate office, a general store, a combined pizza shop and laundromat, a small theatre, a coffee shop where the locals hang out, a restaurant and bar (where tourists hang out), a marina, an arena, schools, the police and fire stations, town hall, a handful of churches, and of course the animal shelter where most of Lost and Found is set.

The psychic teenagers in each of my stand-alone books in this series will have their fair share of adversity and prejudice to deal with. They truly believe they’ve arrived in a place so foreign, so backward, that they try so hard to find a way to leave, only to realize in the end that Fairy Falls has been waiting for them to finally come home to themselves. Welcome to Fairy Falls. Expect the unexpected.

About Lost and Found:

Fairy Falls was bores-ville from the get-go. Then the animals started talking...

The Fairy Falls Animal Shelter is in trouble. Money trouble. It’s up to an old calico cat named Whiskey—a shelter cat who has mastered the skill of observation—to find a new human pack leader so that their home will be saved. With the help of Nobel, the leader of the shelter dogs, the animals set out to use the ancient skill of telepathy to contact any human who bothers to listen to them. Unfortunately for fifteen-year-old Meagan Walsh, she hears them, loud and clear.

Forced to live with her Aunt Izzy in the safe and quiet town of Fairy Falls, Meagan is caught stealing and is sentenced to do community hours at the animal shelter where her aunt works. Recipe Guest Post: Go Greek this Summer by Sloane Taylor...

This fun recipe serves two for a terrific lunch. Add a loaf of crusty bread and a bottle of crisp white wine and let the afternoon take you where it will.

GREEK SALAD

3 tbsp. olive oil
½ tbsp. lemon juice
1 tbsp. red wine vinegar
1 tsp. oregano
1 tsp. garlic, chopped fine
Freshly ground black pepper to taste
3 Roma tomatoes
½ green pepper, seeded
1 small cucumber, peeled
¼ red onion, sliced thin
1 tbsp. sliced black olives
Feta cheese to taste

WHISK first 6 ingredients together in a small bowl. Set aside. Do not refrigerate.

CHOP tomatoes, green pepper, and cucumber into medium-sized chunks. Toss into a large mixing bowl.

ADD the black olives. Mix by hand to blend the flavors. At this point you can cover the bowl and set in the refrigerator until ready to serve.

WHEN it’s time to serve, add just enough dressing to moisten the salad. Don’t drown it. Toss by hand or with two large spoons.

TRANSFER to a serving bowl or individual plates. Sprinkle feta cheese across the top and enjoy!

This salad also works great with dinner and will serve four.

Celebrating #Windsor Writers: Author Justine Alley Dowsett Brings Her Fiction into the Kitchen…


There’s a scene in the first book of my Mirror World Series where the main character Mira, in disguise as her alter ego, Lyana, lets the ruler of their world take her to dinner, only she has secretly orchestrated the whole thing in an elaborate seduction attempt.

The menu is carefully chosen and each course described in detail, but for today’s purpose I’ve chosen to share the dessert course with you. The Panarch and Lyana enjoy Tiramisu because it is an expensive and rare treat, not too sweet, but rich in flavour. I chose to provide the recipe for Matcha Tiramisu because my book is set in a fantasy world, and that means I get to do what I like!

Matcha Tiramisu

What You Need:

1 tablespoon Matcha powder, plus more for dusting

2 packages of Lady Fingers

1 tub Marscapone Cheese

500 ml Whipping Cream

2 tablespoons Sugar

What You Do:

ADD sugar to whipping cream and beat until fluffy.

FOLD in Marscapone cheese.

BOIL water and add matcha powder, whisking until dissolved.

QUICKLY dip lady fingers into the cooled matcha mixture, then transfer them to a pan creating a bottom layer. Once complete, cover with marscapone and whipping cream mixture and repeat until there is no more marscapone and cream mixture left.

DUST the top with matcha powder and leave in the refrigerator for a few hours to set.

The extra quarter turn of the hourglass Caralain spent in the waiting room helped her to calm her nerves and gather her thoughts. By the time Mirena left the Panarch’s office with a bounce in her step that sent her long white-blonde hair swinging, Caralain was ready. She stood, brushed imaginary dust from her clothing, and strode into the Panarch’s office with purpose.

“Panarch, thank you for allowing me to speak with you,” she began as soon as she was across the threshold, doing her best to avoid meeting his gaze directly lest she be overwhelmed again.

“Of course,” Terrence Lee answered, shutting the door behind her and heading for the chair behind his desk. “I have an open-door policy, as you know, so it’s no trouble.”

“Right, of course.” In fact, she did know that, in theory. In practice was another matter altogether. “Well, either way, I’m glad to have the opportunity to speak my mind. You see, I have…important information regarding the woman who was just in here speaking with you.”

He lifted a brow in question. “Mirena?”

Oh no, they’re already on a first name basis. Caralain felt a momentary panic seize her heart. Maybe I’m too late.

“Uh, yes, Mirena Calanais. Well, you see, I have reason to believe that Mirena has plans…” She hesitated, but having come this far, she knew she had to continue. “Plans to remove you from office and install herself in power in your place.”

To Caralain’s surprise, a wide grin spread across the Panarch’s face, his blue eyes twinkling with amusement. “Oh?”

She couldn’t help but feel discomfited under that blue-eyed stare. She wriggled uncomfortably in her seat. “Uh, yes. I know it seems ludicrous from where you’re standing, with Mirena’s relative anonymity at this point, but…”

“No, it’s not that,” he chuckled. “Mirena was just in here saying exactly the same thing.”

“She what?!”

“Mirena is a bright girl with a bright future ahead of her,” the Panarch told her and Caralain felt the world beneath her feet begin to fade away, leaving in its place only a dark abyss from which there was no return. “I’m thinking of making her my apprentice, actually. She showed great promise in the meeting we just had.”

Caralain’s heartbeat picked up speed and the air suddenly felt thin as she tried to take in enough to keep breathing. She was halfway to her feet and stumbling out of the chair before she realized that there was nowhere she could flee that would be safe from what she was hearing. “No! I mean, you can’t! She’s…she’s a monster. She’ll destroy this world and everything good in it.”

Terrence Lee’s look of patient amusement turned quickly to one of concern and alarm. He also got to his feet. “Ms. Dashar? Are you all right?”

He was coming around the desk now and Caralain realized abruptly how she must look and sound. She fought desperately to bring her fear under control and to compose her face. “Yes, yes, of course, I’m fine.” She started for the door and was relieved when her hand found the handle. “This was a mistake. I’ll just go.”

She wrenched the door open and allowed the gentle murmur of the waiting room comfort her nerves.

“Are you certain?” He wasn’t just going to let this drop, but Caralain couldn’t let her sanity, and therefore her credibility, be called into question. “I can call someone for you if you need me to. A Healer, perhaps?”

“No, no, I’m fine. Thank you for taking the time to speak with me.” And with that, she fled.

About Mixter Twizzle's Breakfast:

Mixter Twizzle is an odd, red, round-shaped, mischievous creature. He lives in a hovel, beneath a rustic barn, underneath the chicken coop at Riverdale Farm. He’s a snoozing sneezer and a snoring barker---a peculiar sort that both annoys and pleases. At first, Mixter Twizzle is thrilled by his egg-gorging fests, delighting in his own wickedness, but he soon realizes he is lonely. He longs for companionship, but the hens will have nothing to do with him. Can this fiendish creature learn to make friends at the farm?

Regan W. H. Macaulay writes novels, short stories, children’s literature, and scripts. Writing is her passion, but she’s also a producer and director of theatre, film, and television. She is an animal-enthusiast as well, which led her to become a Certified Canine (and Feline) Massage Therapist. Other award-winning picture storybooks by Regan W. H. Wei Lu is an illustrator and graphic designer residing in Toronto. She grew up in China before studying at Nova Scotia’s College of Art and Design. She loves animals and make-believe characters of any kind and can bring them to life with a pencil and paper.
