Heat Up Your Winter with Cookbook Author Sloane Taylor's Spicy Jambalaya...


With winter in full swing, I asked cookbook author and gourmet guru, Sloane Taylor to stop by and prepare us a pre-Mardi Gras dish guaranteed to keep you warm enough to make you believe that you're in the middle of New Orleans on a steamy summer evening. Welcome, Sloane! My virtual kitchen is yours, so let's heat things up...

JAMBALAYA
 
2 tbsp. olive oil
1 cup onion, chopped
½ cup celery, chopped
½ cup green pepper, chopped
½ tbsp. garlic, chopped
¾ lb. andouille sausage, sliced to pieces 1 inch thick
2½ cups chicken stock, possibly more
½ tsp. dried thyme
¼ cup paprika
1 tsp. dried oregano
½ tsp. red pepper flakes
½ tsp. tabasco sauce2 tsp. Worcestershire sauce
Freshly ground black pepper to taste
1 cup rice
1 cup green onions, chopped, include plenty of green

Warm a Dutch oven on medium heat. Pour in oil. When it shimmers add onion, celery, and green pepper. Sauté 7 – 9 minutes, or until onion is translucent. Adjust heat so onion doesn’t burn. Add garlic. Sauté 1 minute, stirring constantly.  

Stir in sausage and stock. Add remaining ingredients, except rice and green onions, and then stir well.

Add rice and bring to a boil. Cover then lower heat to simmer. Cook 25 minutes. Stir well after each 10 minutes so rice doesn’t stick to pan. Add more stock if the food looks dry.

Sprinkle green onions across the rice mixture when you serve.

Love is in the Kitchen this Spring with a Taste of Sloane Taylor's Date Night Dinners Cookbook...

This quick recipe is ideal for those days you are too busy to fuss. Add a salad and a loaf of crusty bread to round out dinner. After you assemble all the ingredients on your counter pop open a bottle of Soave white wine from the Veneto region in Italy to enjoy while you cook. It’s perfect for this meal.

Linguine with Artichokes and Leeks
2 medium leeks, white and light green parts only
2 12-ounce jars marinated artichoke hearts in oil
3 tbsp. olive oil
1 tbsp. lemon juice
3 tsp, kosher salt less will not disturb the flavors
1 tsp, freshly ground black pepper
1 pound linguine
½ cup freshly grated Parmesan

Halve the leeks lengthwise and cut into 1-inch pieces. Wash well to remove any sand grains.

Cut the artichokes lengthwise if large.

Heat the olive oil in a large skillet over medium-low heat, add the leeks, and cook until soft but not browned, stirring frequently, about 5 minutes. Remove the leeks from skillet and set aside.

Increase heat to medium and add the artichokes. Cook about 3 minutes stirring often.

Return the leeks to skillet and toss to mix. Stir in the lemon juice, salt, and pepper.

Cook the linguine according to the package directions, reserving ½ cup of the pasta water.

Transfer pasta to a large bowl. Add vegetables and toss with half the Parmesan cheese. Add a little pasta water to moisten if necessary. Sprinkle with the remaining cheese.

Easy Baked Chicken Breasts 
Non-stick cooking spray
3 boneless chicken breasts
½ cup mayonnaise
5 tsp. Italian seasoned dry bread crumbs
½ cup Parmesan cheese, grated

Preheat the oven to 425° F.

Spray a light coating of cooking spray into an ovenproof dish that will hold the chicken comfortably.

Rinse chicken and pat dry. Set on a plate.

Mix mayo and bread crumbs together in a small bowl. Spread onto both sides of chicken.

Lay chicken in prepared dish. Sprinkle Parmesan over the top of coated chicken.

Bake 20 minutes or until the juices run clear when chicken is pierced with a sharp knife.

Our 2020 Lifestyle Reboot…


Being an author has its perks. You can work in whatever clothes (or none) you desire, get up at whatever time you wish, and the travel time from your bedroom to office is practically nil. Unless, of course, you decide to go write at your local coffee shop. However, sitting in a chair for a good portion of the day has its drawbacks. Our bodies were meant to move. Period. So I try to get up every so often, stretch and walk around. I get in a workout early in the morning at least five days a week, and have done so for many years. Yes, some days are harder than others and the recent December holidays added a little more to my frame than I’d like, but it never bothered me much. Until hubby was diagnosed with Type 2 diabetes at the end of January.

That was our wake-up call.

Enter our lifestyle reboot. Thankfully, we had already started making healthier food choices just after New Year’s Day, using our son’s wedding in May 2020 as our incentive. Trust me, weddings are great motivators! More vegetables (raw and cooked), fruits, whole grains, protein like skinless-boneless chicken breasts, fish (salmon, sole, cod, and haddock) were our go-tos. I used the Mediterranean Diet as the basis for our meals, and created a two week rotating menu to use as a guide, adding different recipes from health-centered websites and cookbooks to keep our meals from getting…well, boring.

We met with a dietitian the beginning of February who helped us understand the Glycemic Index food guide to make better choices when grocery shopping. She also pressed that the portion size is important when you fill your plate. I always told hubby that size mattered! Wink. Exercise was discussed, and she gave us both a thumbs up for being proactive with our morning workouts. Hubby was prescribed a blood glucose monitor, and faithfully checks his blood sugar every day. We are both well on our way to investing in our health and wellbeing in this new decade, and so far, I’m happy to report that as of writing this post (mid-March), hubby has lost almost twenty pounds. I’ve lost almost five pounds, but in truth, was going for losing more inches, and toning those…um sagging bits, which I’m pleased to say have noticeably shrunk. Woohoo!

I’m including a couple of recipes with images from Sloane Taylor’s Date Night Dinners cookbook, because these meals were part of the menu I created in January, and they were just too darned delicious not to share!

Baked Salmon

Non-stick cooking spray
3 salmon fillets, no more than 1 inch (2.5cm) thick

¼ cup (30g) brown sugar
¼ cup Dijon mustard
½ tbsp. (10ml) white wine
2 tbsp. (30ml) butter
1 tbsp. pine nuts
3 scallions/green onions, sliced, be sure to include much of the green

PREHEAT oven to 425° F (220°C).

SPRAY aluminum foil and lay it on a cookie sheet. Place fish on foil.

COMBINE sugar, mustard, and wine in a small bowl. Whisk until smooth.

SPREAD mixture evenly over salmon to cover it. Bake 15 minutes or until fish flakes with a fork.

MEANWHILE, prepare green onion topping while salmon bakes. Melt butter in small fry pan. Add nuts, they give the dish extra crunch. Stir in onion. Saute until onion is soft and lightly colored. Set aside.

TURN oven to broil. Move fish to 4 inches from heat. Broil 2 minutes or until golden.

ADD a dollop of green onion mixture on top of each salmon steak and serve.

Easy Baked Chicken Breast

Non-stick cooking spray
3 chicken breasts, boneless and skinless
½ cup (60g) mayonnaise
5 tsp. (25ml) Italian seasoned dry bread crumbs
½ cup (60g) Parmesan cheese, grated

PREHEAT oven to 425°F (220°C).

SPRAY a baking dish lightly with cooking spray. Rinse chicken and pat dry.

MIX mayo and bread crumbs together in a small bowl. Spread onto both sides of chicken.

LAY chicken in prepared dish. Sprinkle the top of coated chicken with Parmesan cheese.

BAKE for 20 minutes or until the juices run clear when chicken is pierced with a sharp knife.

The Perfect Fish Recipe for Lent by Sloane Taylor...


You’ll be pleasantly surprised by the enticing aroma from this easy recipe and the taste is superb. Studs and I have served this menu to skeptical guests and they fell in love with it.

Cook pasta prior to starting fish. Re-warm by running hot water over the just noodles before serving.


Serve with Whole Grain Spaghetti, Tossed Salad, Italian Bread, 
and White Wine – Pinot Grigio





TANTALIZING COD

1 tbsp. olive oil
½ med. onion, sliced thin
2 garlic cloves, chopped fine
½ cup dry white wine
5 lg. Roma tomatoes, chopped
½ cup black olives, sliced
2 tbsp. parsley, chopped or 1 tbsp. dried
1 tbsp. capers, drained and chopped
¼ tsp. crushed red pepper
4 cod fillets, about 6 oz. each
½ tbsp. fresh basil, chopped or 1 tsp. dried

Heat a large skillet on medium-high. Add oil. Heat until it shimmers. Add onion, stir until translucent and lightly browned. Stir in garlic, cook 30 seconds. Add wine, cook 1 minute. Stir in tomatoes with the juice, olives, parsley, capers and red pepper. Heat to boiling.

Lay cod fillets over tomato mixture. Lower heat to medium. Cover skillet and cook until cod turns opaque throughout and flakes, about 9 minutes.

Sprinkle basil across the top.

Serve over whole grain spaghetti. Don’t prepare extra. Leftovers have a stale taste and tend to be tough.

A Holiday Feast Fit for a Family by Sloane Taylor...

My favorite day of the year! We celebrate with a houseful of friends and relatives by serving a sit-down dinner complete with crystal glasses, all the pretty dishes I’ve gathered over the years, and what I call my “good” flatware. Each year I try to create a memorable meal such as the one listed here.

This elegant dinner, with marvelous flavors, is easy to prepare. On a tight schedule? Most of the meal can be assembled in advanced. Look for the ** in the instructions for the stopping point. Continue cooking on Christmas Eve. I suggest you make extras and freeze them for future use. You’ll be glad you did.

MENU
Mock Chicken Legs
Roasted Potatoes
Snow Peas with Lettuce & Chives
Sautéed Mushrooms
White Wine – Chablis

Mock Chicken Legs
Use equal amounts of the three meats. If you are anti-veal, the beef and pork alone are still great. Increase their amounts to 1½ pounds (750g) each.

1 lb. (500g) beef eye of round or other high-quality roast, cut into 2 in. (5cm) cubes
1 lb. (500g) pork tenderloin, cut into 2 in. (5cm) cubes
1 lb. (500g) veal shoulder, cut into 2 in. (5cm) cubes
Skewers about 6 – 8 inches (15 – 20cm) long
3 eggs
Freshly ground pepper to taste
1½ cups (200g) seasoned bread crumbs, possibly more
Olive oil

Alternate the meat types as you skewer them. Set aside on waxed paper.

** Stop here if you plan to cook the legs another day. If you made extras, this is the time to freeze them.  Lay the skewers to cook on a cookie sheet. Cover with cling wrap and refrigerate.

On the day of serving, cover a platter or cookie sheet with waxed paper. Combine eggs and pepper in a flat bowl. Pour breadcrumbs into another dish. Dip skewers, one at a time, into egg mixture. Roll in bread crumbs then set them back onto the waxed paper. Refrigerate for at least 30 minutes to set the coating.

Preheat oven to 350° F
(180°C).

Heat ½ inch
(1.25cm) olive oil in a frying pan set over medium-high heat. When the oil shimmers, carefully lay in a few skewers and brown well on all sides. As they cook set them into a baking dish, stacking the skewers is fine.

Cover the dish and bake for 1 – 1 ½ hours or until fork tender.

Do NOT add any liquid to the meat. This dish produces its own fantastic sauce.

Roasted Potatoes
These potatoes are definitely out of the norm, but they are great with any meat dish.

3 tbsp. (45ml) olive oil
3 tbsp. (45ml) cider vinegar
1 tbsp. (15ml) kosher salt
1 tsp. (5ml) dried thyme
1 red potato per person, quartered but not peeled

Preheat oven to 425° F (220°C).

In a small bowl whisk together olive oil, vinegar, salt, and thyme.

Place potatoes in a large plastic bag. Pour mixture over them and gently shake bag to coat evenly.

Spread potatoes in an even layer on a baking sheet. Drizzle remaining mixture over them. Bake until potatoes are toothpick tender and slightly browned, 50 minutes.

Snow Peas with Lettuce & Chives
This recipe from France that serves two is one you will want to serve often. Simply increase the ingredient amounts proportionally when you prepare this dish for more people.

4 oz. (125g) snow peas
2 tbsp. (25g) butter
Pinch of sugar
½ Boston lettuce, shredded
1 tbsp. (15ml) chives, chopped fine, or 1½ tsp. (7.5ml) dried
2 green onions, sliced fine be sure to include the green stems

Trim ends off peas with a sharp knife. Melt butter in a saucepan over medium heat. Be careful not to let this burn.

When the foam subsides stir in peas. Stir in sugar. Cover and cook 5 minutes.

Add lettuce, chives, and onions. Gently toss until lettuce has wilted.

Scoop into a bowl and serve.

Christmas Day

After we entertain Christmas Eve, we tear through the house cleaning up before all the kids and grands come for brunch Christmas Day. This meal is wonderful because so much can be prepared well in advance.

MENU
Breakfast Souffle
Hash Browns
Fresh Fruit Salad
Mini Croissants
Christmas Cookies & Leftover Desserts
Mimosas

Breakfast Soufflé
1 lb. (½kg) ham, bacon, or breakfast sausage
9 eggs, lightly beaten
3 cups (750ml) milk
1 tsp. (5ml) dry mustard
Diced green, red, and/or yellow pepper to taste
½ lb. (57g) sharp cheddar cheese, grated
½ lb. (57g) Swiss or Gruyere cheese, or a combination of the two, grated
Diced onion to taste
Freshly ground black pepper to taste
4 – 1 in. (2.54cm) slices Vienna or French bread, cubed

Preheat oven to 350°F (180°C).

Dice ham or bacon. If you use ham, set aside in the bowl you use for the eggs. Fry bacon to the crispness you prefer. Drain on paper towels. If you use breakfast sausage, fry meat until no longer pink. Be sure to break up any clumps. Drain meat in a colander while you continue to prepare the soufflé.

Add all ingredients, except the bread, to eggs. Stir well. Gently stir in bread.

Pour mixture into an ungreased 9 x 13-inch (33 x 22cm) glass baking dish. Bake 1 hour or until a knife inserted in the center has no egg clinging to it.

This dish can be assembled one or two days ahead of time. On serving day allow the soufflé to sit on your counter 1 – 2 hours before you bake it.

Leftovers are excellent from the microwave.

Hash Browns
If you need to increase the hash browns recipe for a larger group of people, it’s best to sparingly add more garlic powder. As is this recipe serves 6. Leftovers reheat beautifully.

3 russet potatoes (about 1½ pounds), peeled
1½ tsp. (7.5ml) garlic powder, not salt
Freshly ground pepper, to taste
¼ cup (60ml) extra virgin olive oil

Shred potatoes on the large holes of a box grater or use the coarse grater disk on a food processor. Transfer them to a bowl of cold water. Allow them to soak for 2 minutes. Drain in a colander and then rinse under cold water. You do this to remove the starch that makes hash browns gummy.

Transfer shreds to a kitchen towel. Gather together ends of towel and twist over sink, squeezing firmly to wring out as much liquid as possible. This step creates crisp hash browns. Transfer potatoes to a medium bowl and toss with garlic powder and pepper. Be sure to evenly distribute the seasonings.

Heat olive oil in a large skillet over medium heat. Add potatoes, press down to form a thin layer and cook for a minute or two. Stir and then press down again. Cook until a dark golden crust forms, about 5 minutes.

Turn potatoes in sections. This is easier than trying to turn the food as a whole. Continue to fry until hash browns are crisp and browned all over, 5 minutes or so. Transfer to paper towels to absorb excess oil.

Fresh Fruit Salad
1 banana, peeled
1 pear, cored
1 tbsp. (15ml) lemon juice
¼ pineapple, peeled, cored, and diced
1 kiwi, peeled and sliced
10 seedless red grapes, halved
10 blueberries
10 raspberries, optional

Slice banana into bitesize pieces. Scoop into a medium-sized bowl. Dice pear and add to bowl. Sprinkle lemon juice over fruit to stop it from turning brown and mix well.

Gently fold in remaining fruit.

Spoon into a glass bowl, cover with cling wrap, and chill until time to serve. Leftovers are still good the next day.

Mimosas
1 bottle sparking white wine or champagne, cold
1 carton orange juice, cold
Tall slender glasses

Fill glasses half full with wine. Tip the glass slightly as you pour to retain the fizz. Top off with orange juice. Don’t stir. That will destroy the bubbles.

My Recipe Review Prepared from the Cookbook: Date Night Dinners by Sloane Taylor...

I added an extra bottle of Chardonnay...just in case.


So, I decided to take a chance and prepare Sloane’s special Chicken Cutlets from her Date Night Dinners, Meals to Make Together for a Romantic Evening cookbook. This recipe drew me in for some reason, and I liked the serving suggestion that accompanies this meal. Plus, she had me at Chardonnay. Wink. Here’s what the Gourmet Goddess herself, has to say about this dinner choice: “This is a lovely meal for two to share by candlelight or with family and friends and rousing conversation. It’s also perfect al fresco on a Sunday afternoon.” Sounds good, right?

I went all in and used the suggested servings which included roasted potatoes, candied orange carrots, and my favorite white wine—Chardonnay. My mouth waters just thinking about this succulent supper! Below are the ingredients to create Sloane Taylor’s simple and tasty version of Chicken Cutlets and suggested sides, as well as my review. Bon appetit!


Chicken Cutlets

What You Need:
5 slices bacon, chopped
¼ (30g) cup flour
3 chicken breasts, skinless and boneless
1 tbsp. (15ml) butter
4 garlic cloves, pressed or chopped fine
1 tbsp. (15ml) fresh rosemary, chopped or 1 tsp. dried
¼ tsp. (1.25ml) red pepper flakes
1 cup (250ml) chicken stock
2 tbsp. (30ml) lemon juice
Freshly ground pepper to taste

Candied Orange Carrots:

What You Need:
½ lb. (250g) packaged mini carrots
Juice from one medium orange
1 pinch nutmeg
¼ cup (60ml) maple syrup
4 tbsp. (57g) butter
Fresh parsley, chopped



Roasted Potatoes:

What You Need:
3 tbsp. (45ml) olive oil
3 tbsp. (45ml) cider vinegar
1 tbsp. (15ml) kosher salt
1 tsp. (5ml) dried thyme
1 red potato per person, quartered but not peeled






What I Thought: 5 Star Sizzle and Yum

My mouth still won’t stop smiling. Or watering. To be honest, meals like this overwhelm me for some reason. I’m not the greatest cook, but I thought I give it the old college try and throw myself to the mercy of the judges (hubby and daughter). The whole meal tasted excellent, and it got a thumbs up from my family. Mind you, I had a little help from my daughter with the preparation, but all and all, I loved the way this meal came together. Either one of the sides can be easily served with different main courses too.

Just a few things to consider. If you have a gas stove, adjust your times accordingly. The potatoes were slightly burnt on the bottom, but this didn’t deter from the taste. We had to add a little flour to thicken the sauce with the Chicken Cutlets, and we’re so glad we did. Would I do this dish again? You bet! And next time, I won’t feel so stressed or overwhelmed. Cooking is all about the experience and experimenting with the ingredients. It’s almost like an alchemic dance with food. Yeah, sometimes it gets messy, but in the end it’s the satisfaction of creating a meal that’s not only sublime to your palate, but to your whole being as well. Cheers!
