A Recipe and a Read: Tasty Banana Coconut Muffins and a Time Travel Romance Romp by Author Stella May...

This is a wonderful recipe my family enjoys with breakfast or as a snack. Not only are the muffins nutritious, but they're also easy to prepare, taste great, and freeze beautifully. I hope you enjoy these oven gems as much as we do. 


Banana Coconut Muffins
2 ripe bananas
2 large eggs, or 3 small
⅓ cup sugar⅓ cup oil (I use sunflower oil)
1 cup unsweetened shredded coconut
1 cup plain yogurt
1 tbsp. vanilla
Pinch of salt
1 tsp. baking powder
2 cups almond flour
1 cup chocolate chips, optional
1 cup chopped nuts (any type), optional

Preheat oven to 350° F.

Mix eggs with sugar, then add all ingrediencies through baking powder.

Stir in almond flour. The mixture is supposed to be a consistency of sour cream. Add chocolate chips and nuts if you choose to use them.

Prepare a cookie sheet with lightly oiled baking cups. Spoon mixture into cups.

Bake 30-40 minutes, depending on your oven. Muffins are ready when a toothpick inserted in the center comes out clean. You can also use this recipe in a loaf pan to make Banana Coconut Bread. Bake at the same temperature for approximately 55 – 60 minutes. Either way, cool completely then enjoy.

Author in the Kitchen: Eris Field Perese's Healthy Meatloaf Meal and her latest Historical Novel...

It's so easy to misplace things, well it is for me, so I thought I should share this recipe for a great meatloaf dinner before I lost it.


Meatloaf Veggie Dinner
1 lb. ground beef
1 egg, beaten
½ cup finely chopped onion
3 tbsp. ketchup
¾ tsp. salt
¼ tsp. ground pepper
½ can condensed Campbell's tomato soup
¾ cup dry breadcrumbs ( I like Italian ones)
6 small red potatoes
4 garlic cloves, optional
1 tbsp. olive oil
½ tbsp. mixed Italian herbs
Cooking spray 

Meatloaf Topping
½ can condensed tomato soup
3 tbsp. Worcestershire sauce
2 tbsp. brown sugar 

Combine ingredients in a small bowl then coat meatloaves with the mixture.  

Preheat oven to 400° F. 

Mix ingredients together, ground beef through breadcrumbs, I use my hands.  Shape into 5 small loaves and place them (not touching) onto the center of the baking pan. 

Wash, dry, and cut into about ½ inch pieces potatoes with skin on.  Add garlic. Sprinkle lightly with olive oil and Italian herbs.  Set aside. 

Spray a shallow baking pan big enough to hold the meatloaves in the center and a mixture of vegetables around the edges. 

Bake 35 minutes.  Check to see that the meat loaves and veggies are done.  Let stand 5 minutes and serve.

My historical novel-- Lady Munevver: The Opium Merchant’s Daughter-- is set in the Victorian period as England is preparing to enter the War in the East, the Crimean War, to support the Ottoman Empire that has been invaded by Russia.  Russia’s 1853 invasion of Crimea results in three Empires—England, France, and the Ottoman Empire-- declaring war on Russia. It precipitates a disastrous marriage for Lady Munevver. It changes the world with advances in ships and military weapons, the development of the telegraph with its ability to deliver war news almost instantly, and the creation of modern nursing in Scutari Hospital. 

In Surrey, England, the merchant father of beautiful but handicapped Munevver is obsessed with gaining acceptance by the Ton.  Refusing Munevver’s plea to marry her childhood love, William of Yorkshire, he arranges a marriage with James, the dissolute son of an impoverished, hard-handed Duke.

When England is drawn into the Crimean War, James joins the Light Brigade and sails to the Ottoman Empire to fight the invading Russians. After learning her husband has died in Scutari Hospital, an improvised hospital for English soldiers located across the Bosphorus from Constantinople, Munevver, terrified at what her father-in-law might do, flees England. Her destination: the ancient city of Aleppo in the eastern part of the Ottoman Empire where she hopes her uncle will shelter her in his vast trading compound.

Her escape ends in Constantinople when. the Sultan, irate at Queen Victoria’s command that he return the widow of one of her Lords, arranges a marriage for Munevver with Ari, a member of his court. Problem solved.  Munevver is now the wife of an Ottoman citizen. She is invisible.

Banished to the ancient, primitive city of Ankara, the young couple struggles to survive political intrigue, intense cold, and lack of medical care.  After Ari dies of tuberculosis, Munevver is desperate to return to Yorkshire, to her grandfather and to the man she loves, William. But how? Dare she accept the quid pro quo arrangement offered by the most powerful woman in the Ottoman Empire, the Sultan’s mother?

Eris Field
was born in the Green Mountains of Vermont—Jericho, Vermont to be precise—close by the home of Wilson Bentley (aka Snowflake Bentley), the first person in the world to photograph snowflakes. She learned from her Vermont neighbors that pursuit of one’s dream is a worthwhile life goal.

As a seventeen-year-old student nurse at Albany Hospital, Eris met a Turkish surgical intern who told her fascinating stories about the history of Turkey, the loss of the Ottoman Empire, and forced population exchanges. After they married and moved to Buffalo, Eris worked as a nurse at Children’s Hospital and at Roswell Park Cancer Institute.

Start the Season with this Healthy Recipe and Venture into a Fantastical Young Adult Read this Fall...

I discovered this healthy recipe from an online diet and exercise program I purchased last year and loved it! It packs a different punch to your taste buds while providing a healthier choice to add to your personal menu. Who said a burrito needed to be unhealthy? This easy recipe provides anti-inflammatory properties from apple cider vinegar, immune boosting benefits from garlic, and healthy, inflammation-cooling fats from olive oil. Instead of heading to your local fast-food Mex-Tex joint, try making your own burrito at home.


Chipotle Chicken Wrap

1 garlic clove
1 tbsp. olive oil
1 tsp. chili powder
1 tsp. apple cider vinegar
Juice from ½ lemon
Pinch of salt and pepper
½ tsp. paprika
4-6 oz. boneless, skinless chicken breast, diced
1 cup romaine lettuce or spinach, chopped
1 tbsp. shredded carrots
½ cup quinoa, cooked, optional
Sliced avocado, optional

Salsa

½ tomato, diced
¼ onion, diced
2 tbsp. chopped cilantro
Squeeze of lemon juice
Note: you can use your favorite brand of salsa if you choose 

Make your chipotle sauce first by blending blend together garlic, olive oil, chili powder, vinegar, lemon juice, paprika, salt and pepper until smooth (ideally in a blender). Use this sauce to marinate your chicken in a zip lock bag for a minimum of 30 minutes. 

Mix together all of your salsa ingredients in a bowl. 

Cook the chicken in a sauté pan until thoroughly cooked through, about 10 minutes. 

Serve on a bed of lettuce with chicken and salsa on top. Add cooked quinoa and/or avocado if desired. 

While you’re waiting for your healthy wrap to digest why not put your feet up and relax on the couch with a good book? Recipe and a Read: Healthy Baked Salmon and a Time Travel Romance by Author Stella May...

Honestly, I don’t like to cook fish, especially salmon, but this recipe almost cooks itself. Yes, it’s that easy. This recipe works great with a whole fillet, individual ones, or steaks. Give it a try.

Baked Salmon in Lemon Juice

1 salmon fillet
1 or 2 lemons
Salt and pepper to taste, optional

Pre-heat oven to 350° F.

Wash and dry salmon. If you use a whole fillet, cut into serving size pieces for easier handling. Lay fish into any ovenproof dish that has a cover or use an aluminum foil lined cookie sheet then cover the salmon with heavy aluminum foil. 

Pour fresh squeezed lemon juice over fish. It must be half covered in liquid. Cover tightly with a lid or aluminum foil.

 Bake in the oven for 30 minutes. 

You can sprinkle salt and pepper on before you bake the fish, but I prefer to cook it without.
