A Soothing Soup Recipe and Couple of YA Fantasy Reads by Chris Pavesic...

 My sister-in-law Breen loves to cook and occasionally works her magic in my kitchen. Just the other day she prepared one of our family favorites. We thoroughly enjoy a bowl or two during winter as lunch or dinner. For me the pepitas make this dish a hit. I love scooping them out one at a time with a spoonful of soup!

Roasted Butternut Squash Soup
4 lbs. butternut squash, peeled, seeded, and cut into 1-in. cubes
2 tbsp. olive oil
Salt and pepper to taste
2 tbsp. unsalted butter
1 onion, roughly chopped
8 cups chicken broth
1 tsp. dried thyme
Pepitas (Shelled pumpkin seeds)

Preheat oven to 400° F.

Place squash on baking sheets; avoid overcrowding.  Toss with olive oil, salt, and pepper.  Roast for 30 minutes.

Meanwhile, in a large Dutch oven over medium-low heat, melt the butter.  Add the onion and sauté until translucent, about 5 minutes.  Pour in the chicken broth and add thyme.  Bring to a boil. 

Remove the squash from the oven and add to the broth.  Simmer for 10 minutes.  Remove from heat.  Using a regular or immersion blender, puree the soup until smooth.  Serve warm.  Top with pepitas if desired.

Above the tree line floats an airship close to three hundred feet long with a slightly rounded wooden hull. Ropes attach the lower portion of the ship to an inflated balloon-like aspect, bright white in color with an identification symbol, a red bird with white-tipped feathers extended in flight, inside a round yellow circle in the center of the canvas. The deck is manned with archers and swordsmen. There are two sets of fore and aft catapults.

What I don’t see are cannons or any other type of a gun large enough to account for the sound of the explosion.

The ship pivots in the air, coming around to point directly at what looks like an oncoming flock of five large birds. Or creatures. They are too big and too strange looking to be birds. They drift closer, flapping their wings.

A moment passes before I realize that they are not creatures either. They are some sort of gliders. A person hangs below each set of the feathered wings, which flap and move with mechanical precision in a sky washed out by the morning sun.

The archers nock their arrows and aim at the flock.

The gliders draw in their wings and dive toward the deck, covering the distance in a few heartbeats. Most of the arrows fly uselessly past the attack force and fall like black rain from the sky. The archers aimed and released the volley too late.

The forward catapult releases a torrent of small rocks at the lead glider. It is a scatter-shot approach that proves effective. There are so many missiles that it is impossible to dodge them all.

But at the moment the stones strike, the other four let loose with fireballs. Spheres of crackling flame spring from their hands, glowing faintly at first and then with increasing brightness. The balls of fire shoot from their hands like bullets from a gun and fly toward the ship, exploding. Pieces bounce off the hull and fall to the ground, throwing hissing, burning globs of magic-fueled fire in all directions, setting everything they touch aflame.

A Healthy Pita Lunch and YA LitRPG Series is Served by Fantasy Author Chris Pavesic...

This dish makes a quick and easy lunch for a hot summer day. No stove or oven required!

Tuna Hummus Pita Sandwich

1. 5 oz. can tuna in water

1 tbsp. lemon juice

1 tbsp. red onion, chopped fine

⅓ cup cucumber, chopped

1 tbsp. chopped parsley

1 tbsp. golden raisins or dark raisins

3 tbsp. hummus, divided

1 mini whole-wheat pita

Parsley leaves, for garnish

DRAIN tuna then scoop into a bowl. Mix in lemon juice, onion, most of the cucumber, chopped parsley, and raisins.

SPLIT pita in half horizontally so there is a top and bottom. Spread each half with hummus. Top with tuna salad. Garnish with remaining cucumber and parsley. Enjoy!

Time to Play the Game and Pop the Caramel Corn with Fantasy Author Chris Pavesic...

Is there anything better than homemade sweet and salty caramel corn? Not only does it taste delicious, the aroma that fills the air when you are cooking it is heavenly.

Baked Caramel Corn

Nonstick cooking spray
24 cups air popped popcorn
1 cup (2 sticks) butter or margarine
2 cups firmly packed brown sugar
½ cup light or dark corn syrup
1 tsp. salt ½ tsp. baking soda
1 tsp. vanilla extract

Preheat oven to 250°F.

Coat bottom and sides of large roasting pan with nonstick spray. Place popped popcorn in roasting pan.

In saucepan, slowly melt butter. Stir in brown sugar, corn syrup, and salt. Heat to a boil, stirring constantly. Boil without stirring 5 minutes. Remove from heat. Stir in baking soda and vanilla. 

Gradually pour over popped popcorn, mixing well. Bake for 1 hour, stirring every 15 minutes.

Remove from oven, and cool completely. Break apart and store in tightly covered container.

Guest Post: How a Task Swells to Fill the Time Allotted by Chris Pavesic...

Parkinson’s Law originated with Cyril Parkinson in a humorous essay published in The Economist in 1955 and was reprinted in Parkinson’s Law: The Pursuit of Progress by John Murray (1958). The law states that work will expand and swell in importance so as to fill the time available for its completion. Alternatively, some define Parkinson’s law in regard to time as the amount of time that one has to perform as task is the amount of time it will take to complete a task. This theory posits that the more time you give yourself to do something, the more complex and daunting it will seem.
The perceived amount of work swells to fit the time allotted.
According to this law, if you give yourself a month to work on any project, that project will take a month to complete. You will not be working on this project for the entire time, of course. During that month you will be doing other things. You will procrastinate. You will work on it a few hours here and there. The project, though, will remain in your consciousness. It will cause you stress. It will take mental energy. At the end of the month when you complete the project, it will seem like you worked on this for 30 days, when in fact if you count up the actual hours worked, you may find you worked for less than a day. This theory is interesting to me as a writer. It reminds me of a passage I read in Ariel Gore’s text on writing, How to Become a Famous Writer Before You’re Dead:
Deadlines matter. Obviously, you don’t want to get into the habit of delivering mediocre work—that’s not going to do you any good in the long run—but you’ll notice that if you force yourself to meet your deadlines, you’ll learn to produce better and better writing in whatever amount of time you have. You’ll master the sprint as well as the marathon. Meet your deadlines. Meet them every time.
The key line for me in Gore’s quotation is “you’ll learn to produce better and better writing in whatever amount of time you have.” She is, in fact, talking about Parkinson’s Law for writers. If you can focus, you can get a writing project done in a shorter amount of time. If you work to develop this habit, the quality of your writing will improve in the shorter time frames for the projects. So what lessons can writers learn from Parkinson’s Law? Set tight deadlines for each project. Set time limits and time deadlines for everything you want to complete that day. Once you get into that habit, it will be easier to estimate the amount of time it actually will take you to complete a task.

If you give yourself forever to do something, it is going to take forever to do it.

Labor Day Lemony Blueberry Breakfast Bread by Chris Pavesic...

Now that all the blueberries have been harvested during August, Fantasy author Chris Pavesic has a yummy suggestion on what to do with those tasty blue treats. Take it away, Chris...

Enjoy this delicious and easy bread any time of the year. Fresh or frozen blueberries work great. Make extra, the bread freezes and thaws beautifully.

Lemony Blueberry Bread


¾ cup brown sugar
2 tbsp. milk
1 tbsp. vegetable oil
6 oz. blueberry yogurt
1 large egg
1 tsp. almond extract
2 cups all-purpose flour
2 tsp. baking powder
1 cup blueberries (fresh or frozen)
1 tbsp. all-purpose flour

PREHEAT oven to 350áµ’ F.

IN a medium bowl, stir together sugar, milk, oil, yogurt, egg, and extract. In a separate bowl, combine flour with baking powder. Add the dry ingredients to the wet ingredients and stir until combined.

IN a small bowl, toss blueberries with 1 tablespoon of flour.

FOLD blueberries gently into batter.

POUR the batter into a greased 9 x 5 inch loaf pan. Bake 50 to 55 minutes or until a toothpick inserted into the center of the loaf comes out clean. Allow bread to cool for 10 minutes before turning onto a rack to cool completely.

Lemon Glaze (optional)

⅓ cup fresh lemon juice
⅓ cup white sugar

COMBINE lemon juice and sugar in a small saucepan. Cook over medium heat until sugar is dissolved and then cook an additional 3 minutes. Let glaze cool a bit. Poke small holes in the top of cake and then pour glaze over the bread before removing it from the pan.

Bring on the Summer with a Cool Fruit Smoothie and Fantasy YA Reads by Chris Pavesic...

While working hard on edits and other aspects of publishing, I'm making a lot of smoothies instead of full meals. (A lot of indy authors can probably relate!) The fact that fresh fruit is in season makes this a lot easier!

Maple Blue Smoothie

Ingredients:
  • 1 cup blueberry yogurt
  • 3/4 cup low-fat milk
  • 1 tablespoon maple syrup
  • 1/2 teaspoon ground cinnamon
  • 2 cups frozen blueberries
Materials:
  • Measuring cups
  • Measuring spoons
  • Blender
Directions:
1. In a blender, combine the yogurt, milk, syrup and cinnamon. Add blueberries and blend until smooth. Garnish with fruit.

Blueberry Breakfast Goodies by Author Chris Pavesic...

In anticipation for my upcoming release, Blackflies and Blueberries, Book 2 of Mysterious Tales from Fairy Falls teen psychic mystery series this May, I’ve invited author friend, Chris Pavesic to invade my virtual kitchen and create her mouth-watering Blueberry Muffins for this special occasion. That said, Chris is a talented author in her own right (or write – LOL), so I’ve asked her to share her recent young adult fantasy LitRPG book with us today. Take it away, Chris, the kitchen is all yours…

When writing it is nice to have some quick & easy recipes to make for my family. Because of the fresh, local fruit and yogurt these muffins are healthier than most and go terrific with a cup of hot coffee.

The muffins are naturally sweetened with seasonal, local fruit (blueberries.) A touch of sugar is added to help cream the butter and is also sprinkled on top. You can eat them warm or prepare them the day before for a breakfast treat.

Chris Pavesic’s Quick & Easy Blueberry Muffins


½ cup butter, softened
¼ cup granulated sugar
2 large eggs
1 tsp. vanilla
2 tsp. baking powder
¼ tsp. salt
2 cups all-purpose flour
1 cup vanilla yogurt
2½ cups fresh blueberries
1 tbsp. granulated sugar for topping extra butter for greasing the muffin pan

PREHEAT oven to 350° F.

GREASE muffin pan with butter.

MIX butter until creamy in a medium-size bowl. Add sugar and beat until pale and fluffy.

ADD eggs, beating well.

STIR in vanilla, baking powder, and salt.

WITH spoon, fold in half of flour then half of yogurt into batter; repeat. Fold in blueberries. There is no need to over-mix it.

SPOON into muffin cups and sprinkle sugar topping onto each muffin.

BAKE 15 to 20 minutes, until golden brown and springy to touch.

The forward catapult releases a torrent of small rocks at the lead glider. It is a scatter-shot approach that proves effective. There are so many missiles that it is impossible to dodge them all.

But at the moment the stones strike, the other four let loose with fireballs. Spheres of crackling flame spring from their hands, glowing faintly at first and then with increasing brightness. The balls of fire shoot from their hands like bullets from a gun and fly toward the ship, exploding. Pieces bounce off the hull and fall to the ground, throwing hissing, burning globs of magic-fueled fire in all directions, setting everything they touch aflame.

Cantaloupe and Chia Soup with Mint

This vegetarian soup is a refreshing summer treat perfect for either lunch or dinner.


Cantaloupe and Chia Soup with Mint

Ingredients:
  • 1 large cantaloupe (about 3 lbs.)
  • 1/4 cup honey
  • 1/2 cup orange juice
  • 2 teaspoons chia seeds
  • 1-1/2 tablespoons finely chopped fresh mint, plus small sprigs for garnish
Materials:
  • Measuring cups
  • Measuring spoons
  • Knife
  • Cutting board
  • Large spoon
  • Large bowl
  • Blender
Directions:

1.  Halve melon, scoop out seeds and remove rind.  Cut flesh into large chunks. (About 6 cups)

2.  Working in batches if necessary, combine cantaloupe, honey, and orange juice in a blender.  Pulse or blend until smooth.  Transfer to a large bowl.  Stir in chia seeds.  Cover and refrigerate until thoroughly chilled, at least 2 hours.

2.  Just before serving, briskly whisk soup and stir in mint.  Serve very cold, garnished with sprigs of mint if desired.

I was born into a world where silicone still ruled. Where the products of the earth outshone those of the sea. Integrated circuits ran all electronic equipment and scientists strove to make the conducting lines smaller and smaller. Silicon Valley tried, and failed, to make chips fast enough to upload human consciousness.

The Revelation came a few years later from the hydrologists. They designed a system that did not use silicone, but instead worked with water molecules. The hydrologists managed to imprint the consciousness of a human mind on a single drop of water.

The water was to be kept in self-contained, sealed aquariums—pure, undiluted, eternal—where virtual realities were constructed to meet every need and desire. All of human knowledge encoded and stored in literal pools of data and integrated with the drops of human consciousness. It was, the hydrologists claimed, utopia achieved.

The obscenely rich were the hydrologist's first clients, many taken near the end of their lives. The procedure did not always work, but there were enough successes to spur people's interest. People suffering from terminal illnesses volunteered to be inscribed, and the hydrologists worked and refined their process. Private companies formed and competition forced price wars. Hundreds of customers grew to thousands, and then to millions. There were landmark court cases arguing whether or not health insurance should cover the cost of the inscription--whether or not this was a medical procedure designed to save lives or a form of physician assisted suicide. The law struggled to decide if life ended when the body was drained to a dry, leathery husk, or if life continued inside those glowing, sealed aquariums.

I was thirteen when the governments seized control of the laboratories, first in the Eastern European countries. Then the labs of Europe and the Middle East were swallowed up. Terrorist attacks soon followed and destroyed most of the civilized world over the next three years. The United States, Canada, and Greece, those bastions of democracy, did not fall until the very end. Of course, by then no one cared whether or not the government or the private companies ran the uploading programs. Many of the aquariums ruptured in the strife and the droplets, imbued with human consciousness, re-entered the water cycle of the planet.

The destruction of the aquariums led to a moment of serendipity. Once the hydrologists learned that the human minds survived outside of the aquariums, they designed a world-wide system of interlocking realms to host the inscribed human minds. Right now the realms exist in Challenger Deep, the deepest known point in the Earth's seabed hydrosphere, but the hydrologists have plans to expand their reach into the rest of the world. Soon, the only life left on the planet will exist in the virtual world.
