Holiday Table Settings by Author Catherine Castle...

I’m channeling Martha Stewart today with a home décor post, so bear with me this morning.

As we head into another year of unusual holiday entertaining chances are there will still be fewer people around your table. Fewer guests don’t mean you should back down on the fancy arrangements.  Instead, why not get creative and try something different?

I don’t know about you, but when I have company, I like to set a decorative table. It’s one of the reasons I have ten different sets of dishes and several different sets of glassware. I can set a Disney table, complete with themed flatware and napkin rings; go native American with my Indian patterned dishes; have an indoor garden party with my garden dishes; set two different themed Christmas tables; or celebrate the Fourth of July Americana style. I also have two sets of patterned Corelle®, a plain white Corelle set, and plain colored stoneware that will span several seasons.

I know, I know. That’s way too many plates, cups and bowls for one person to own. But, much to my hubby’s chagrin, it’s a quirky fetish of mine. I collect dishes like most women collect shoes. I can’t bypass a single display of dishes without lusting after them. I realize most women don’t have access to such a wide variety of dishes, aside from Martha Stewart perhaps. But even if you don’t have a bazillion complete sets of dishes, you can still set a decorative table.

Having said that, I decided to challenge myself and my overabundant dish fetish. Instead of using a complete set of one of the ten dish setting I have, could I create four seasonal table settings using only four white dinner plates, 8 solid primary color luncheon plates, and 8 assorted bowls and 4 clear glasses?

With no patterns in the dishes to help set the seasonal mood, I decided to use patterned placemats. Placemats take up less storage room than dishes and cost less to replace if they get stained or you just want a change. Seasonal paper napkins and decorative elements gathered from around the house for centerpieces rounds out the table. Since white contrasts best with colored or patterned placemats I used the white dinner plates as the base for the place settings.

Spring bursts onto the table in shades of yellow, white, and turquoise. A vase of airy pink flowers adorns the center of the table, and a cocktail napkin containing all four colors ties the place setting together. If you’re having an Easter dinner, a pretty Easter basket filled with battery operated candles would be the perfect centerpiece, or unwrap that giant chocolate bunny you bought, set him on a plate with your homemade Easter eggs and fill in the empty spots with Easter grass. This is one centerpiece you won’t have to store.  J



Celebrate summer’s freedom holiday with a red, white and blue theme. A candle in a star shaped dish sets center stage. If you have them, a few sparklers set in small balls of clay around the candle would be an interesting touch. (I didn’t, so I just went with the single candle.) Placing blue and red napkins in the glasses gave the hint of fireworks to the table settings.

 I was sorely tempted to break out the garden dishes to create a summer garden party theme, but since I figured most people don’t have an assortment of flower and veggie shaped dishes, that would be cheating on the challenge.

 

When the temperatures drop and autumn rolls around, bring out the warmer colors of yellow and red to contrast with the warm wood tones of your table. A circle of leaves around a tall candle works as a centerpiece and draws in all the colors of the plates into the palette. If you have fall placemats they can be used under the dishes. I only had two matching autumn placemats, so I chose to forego them on this table setting. Instead of white bowls I used some red and green ramekins to pull in more fall color.




Christmas brings out the traditional, cheery colors of red and green. I interspersed green ramekins with the white bowls for a touch more green in this palette and to make the bowls pop on the red plates. Using green napkins in the glasses looks like you have tiny evergreen tree on your table.



With 20 dishes, not counting the clear glasses, I’ve created four attractive seasonal place settings. Now, the trick will be to not let the hubby see what I can do with only 20 dishes. Because if he finds out, I’ll have no more excuses to buy tableware.

 Which one of these table settings do you like best? I can’t decide. I may just have to see how many more I can create using a few unusual pieces. Oh! New antiquing idea—searching for unique seasonal serving pieces to set off my five-color scheme place settings. Then I think I’ll have some dinner guests over—once COVID is gone.

Celebrating Canadian Thanksgiving with Family and Food...

The one theme I love to weave throughout my two book series is the importance of family. We hold each other tight when times are tough, and on the flip side we can tear each other apart during times of stress and worry. Food seems to be the source of comfort in all family matters.

Meals bring us together to celebrate, cry or support each other in so many ways. The characters in The Last Timekeepers young adult time travel adventure series were originally thrown together, despite their differences, and have had to learn how to act like a family by trusting and working with one another through each Timekeeper mission. In my Mysterious Tales from Fairy Falls teen psychic mystery series, the main characters change with each book, but the setting remains the same, I focused on the tribal matters of the town, and what’s best for the whole. Again, my characters must overcome differences and obstacles in order to keep Fairy Falls’ sense of community safe and intact.

I recently came across my father’s lasagna recipe, and a wave of emotions and memories rushed through me. I loved his meaty take on a popular Italian dish. My dad’s been gone since 1983, and I still miss him deeply, especially when our family gets together over holidays, events or Sunday dinners. So, I thought I’d share his special family recipe with you with the hopes of adding this mouth-watering pasta entree to your menu one day. Bon appetite!

Dad’s Mouth-Watering, Meaty Lasagna

1 lb. lean ground beef
½ lb. ground pork
1 can (28 oz.) whole tomatoes
1 can (12 oz.) tomato paste
2 tsps. garlic salt or powder
1½ tsps. oregano leaves
1 tsp. basil leaves
2 cups cottage cheese
½ cup grated Parmesan cheese
3 packages (4 ounces each) shredded mozzarella cheese
12 oz. lasagna noodles, cooked and well drained (we use precooked noodles)
½ cup grated Parmesan cheese

IN a Dutch over or large skillet, cook and stir meats until brown. Drain off fat. Add tomatoes; break up with fork. Stir in tomato paste, garlic, oregano and basil. Heat to boiling, stirring occasionally. Reduce heat, simmer uncovered 20 minutes or until mixture is consistency of spaghetti sauce.

PREHEAT oven to 350° F (175° C).

STIR together cottage cheese and Parmesan cheese. Set aside 1 cup meat sauce and ½ the mozzarella. In ungreased baking pan, 13 x 9 x 2 inches, alternate layers of ⅓ each noodles, remaining meat sauce, remaining mozzarella, and cottage cheese mixture.

SPREAD reserved meat sauce over top. Sprinkle with Parmesan cheese. Scatter reserved mozzarella across lasagna.

BAKE uncovered 45 minutes. Let stand 15 minutes before cutting. Cut into 3-inch squares.

SERVES 8 of your hungriest family members or friends.

And there you have it! A feast fit for any family who loves getting together to share good food, and create happy memories. So, now that you’ve cooked to your heart’s content, and your belly is full, why not escape from the dishes and curl up with one of my books? Thanksgiving Day(s) Goodreads Giveaways…

In the first book of Mysterious Tales from Fairy Falls series, Lost and Found, the main character, Meagan Walsh has the psychic ability to talk to animals. Imagine possessing the power to be a diplomat between animals and humans? To bridge that gap, and find common ground. In the first book of The Last Timekeepers young adult time travel adventure series, The Last Timekeepers and the Arch of Atlantis, my main characters are given a ‘Babel’ necklace. Mayhem, Milestones, and Practicing Gratitude…

This has been one hell of a tough year so far. It started in February when my then-publisher decided to close their doors, leaving many authors either scrambling to find a new publisher or deciding to try the self-publishing route. I was lucky. I immediately hooked up with Mirror World Publishing whom I met at the Windsor-Essex Book Expo in November 2014, and signed two contracts with them. It was truly a serendipity experience. And I am so grateful.

Both my books were polished and re-released world-wide within six months. My first book, The Last Timekeepers and the Arch of Atlantis was re-launched in June, and Legend of the Timekeepers in August. I went from a stressful situation to relief, and yes, worked hard with my new publisher to get the books back on the shelves. It was a fresh start. A clean slate. And I am so grateful.

Then, I got the reminder that life’s too short, too precious to waste.  This past July, my youngest brother succumbed to cancer. He was only 49, and was diagnosed with a double-wammy of a rare muscle disease and cancer of an unknown primary about 1 ½ years ago. You can never predict something like that is going to happen. Ever. But we know it can—and does. Who knows when life can change for us or those around us? So be grateful for your health. If life’s not what you want, go out and find a new one. If life’s great, live it to the fullest and be thankful every day for all that you’ve been fortunate to do and have. Whatever stage of life you’re in find a way to enjoy it and to maximize your circumstances. I know I’m moving forward with my life. And I am so grateful.

This past August, my hubby and I celebrated our 30th Anniversary—a milestone in this day and age. We booked a cruise to the Western Caribbean in November to mark this momentous occasion and to get a little R&R. It’s a first for us who always seem to put our needs and wants on the backburner of life. So we decided that it’s our time to enjoy what we’ve worked so hard for during the last thirty years together. And I am so grateful.

As I write this post, the combine harvester is reaping the soybeans in the field behind our home. It was a tough year, even for those soybeans with the relentless spring rains, and unpredictable elements. A reminder perhaps, that each year brings different challenges, and new life experiences. I urge you to find what gives you fulfillment, happiness, and a sense of accomplishment. Appreciate the little things and laugh at yourself. Find the courage to change, to rebound, to persist, to pursue, to seek, to speak out, to trust in others, and to cut away the relationships that cause you pain or do not bear fruit. I have. And I am so grateful.

Fruits of your Labors…

The upcoming American Thanksgiving paves the way for the holiday season, and because many of my author friends live in the USA, I feel I’m celebrating being thankful right along with them. Thanksgiving (both in Canada and America) not only gives us time to be with family and friends, but to think about what we’re truly grateful for. It’s also a time for us to reflect on the past year, and take stock in what we have reaped and accomplished thus far. As some of you know, I moved from cottage country to the warmer southern climate of Ontario this summer, and have never looked back. So in keeping with the spirit of giving thanks, I’d like to share one of my experiences since moving down here that I’ll always be grateful for…

Living in wine country has its benefits. So when my BFF came down for a visit this past September, it was a no-brainer on where to take her. Setting a course for a couple of wineries, getting lost for about 15 minutes, then finally getting back on track, we made it to the first winery, and we were not disappointed.

To be honest, I’ve never been to a wine tasting. Usually they’re free if you purchase a bottle. We both tried a few—my BFF preferring red, and I going to the light side, our palette’s danced and tonsils rocked to the taste of each wine sampled. My house warming gift consisted of a rather nice chardonnay. Salute!

Next, we asked for directions to the next winery (far be it for us to put our faith in an out-dated GPS). We found it easily, and met up with a whole lot of bikers on their Ride for MS. What a fun group! We met kindred spirits and wine lovers in two participants named Sharon and Mike, and did a selfie with them! Fun times! Of course more wine was sampled and bought before we cashed in our chips and headed back home.

This whole experience has taught me something. It takes a lot of time to grow, nurture, and prepare grapes before the wine making process begins and after the wine is bottled. It’s a huge industry that relies on many people. So how would you compare making wine to writing a book? It comes down to this: some wines take years to be released into the world, while others maybe months. Authors can crank out words like stomping on grapes until they’re satisfied with the tone and flavor. Other authors take their time, allowing their words to ferment for a while, let breathe, until they too are ready to uncork their properties. However you write, and whatever you write, you can be sure of one thing: everyone’s tastes are different, and there’s bound to be an audience just for you.

The Importance of Family Traditions…

This past August, I was privileged to take part in one of my sister-in-law’s (SIL) revered family traditions: making tomato sauce. Oh the carnage, the mess, the bloodbath! Of course, I’m talking about all the prep work that goes into making my SIL’s secret family tomato sauce. No worries, SIL. I won’t divulge your mother’s sacred recipe—only what I’ve learned from participating in such a fun, family ritual.

First, like writing a book, making tomato sauce requires a whole lot of preparation! There are the tomato bushels to order and pick up. Get the equipment out. Setting up the equipment and tables. Scheduling family members. Buying tomato paste and spices. I tell you it’s a first-class production!

Second, delegation is the key. I looked at this entire operation through the eyes of an author and thought how genius my SIL is. She stationed certain family members for washing the tomatoes (as a newbie, I got to help my nephew with that job). Other family and drop-by neighbors (poor buggers) were commissioned to cut up the tomatoes into quarters. Then, once a few bushels were filled up with severed tomatoes (I know, sounds horrific), they’re placed in a grinder that separates the skins and seeds from the juice, which flows into a large pot set on a propane burner.

Third, once the pot is full (four fingers from the top—believe me this is a science), the burner is lit, and the tomato juice has to come to a rapid boil.

Fourth, once the juice boils, the secret ingredients must be added. This is my niece’s specialty, and she has this down to an art. And if I spill the beans here, she will hunt me down, and squish me like one of those poor tomatoes. Yikes! After the said ‘secret ingredients’ are in the pot, the tomato juice must be set to boil for 45 minutes.

Fifth, a small pot of tomato juice is scooped out of the large pot after the 45 minutes has expired, then placed into another pot with about two large scoops of tomato paste. This concoction is mixed together and placed back into the large, boiling pot. This is akin to editing, rewriting, editing, and rewriting until the author is happy with the story. It’s the process that solidifies the sauce (or in my case, story).

Sixth, finally comes the jarring. Honestly, it’s like being on a production line. SIL stands ready with a jar while my brother pours the sauce into a one liter jar. She quickly puts a lid on it, turns the jar upside down, and goes on to the next jar until the whole pot is emptied. They usually make about 4 pots which fills 50 jars per pot. Wow, that’s a whole lotta sauce!

The whole tomato sauce ordeal takes about twelve hours (not counting prep time) and is a hell of a lot of work. So the question I pose to you is, was this family tradition worth the time, energy, and effort? YOU BET IT WAS! Not only did we make enough tomato sauce to carry three to four households over the year, but we were TOGETHER the entire day. Other then holidays and celebrations, how often does that happen in this day and age?

Family traditions, no matter what they are comprised of, keep the bloodline going long after the older generation have gone. Part of what has been passed along flows to the next generation, and hopefully the next one, and the next. And that is one of the reasons why I write books—to pass on what I’ve learned and experienced from my family and from my life.
