Grass Skirt is Optional with this Hawaiian Crock Pot Dish Served by Romantic Suspense Author Vonnie Hughes...

SWEET HAWAIIAN CROCK-POT CHICKEN
2 lbs chicken tenderloin chunks
1 cup pineapple juice
½ cup of brown sugar
⅓ cup of soy sauce

Combine all ingredients together and cook on low in your crock-pot (slow cooker) for 6 hours. That’s it!

Because this does not contain vegetables you need to serve this either with a crisp green salad that contains red bell peppers for colour, or with a couple of vegetables such as kale and shallots tossed for a minute in garlic infused olive oil so that the crispness contrasts with the chicken.

A Recipe and a Read: Strawberry Sour Cream Muffins and a Romantic Suspense compliments of Author Vonnie Hughes...

It’s my pleasure to share a muffin recipe that will become a breakfast favorite with your family. Use room temperature ingredients for best results as they blend into the batter easily and produce amazing muffins and makes your life easier!

If you prefer not to use butter, then an equal amount of vegetable oil or applesauce works. You can also swap out sour cream for plain unsweetened Greek yogurt. Fresh strawberries are perfect in this recipe, but frozen berries can also be used. Thaw and drain the strawberries before adding them to the muffin mix. If your frozen strawberries are whole, dice them first.


Strawberry Sour Cream Muffins

2 cups flour
2 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
2 ¼ cups fresh strawberries
1 cup sugar
1 stick unsalted butter
2 lg. eggs
1 tbsp. vanilla extract¾ cup sour cream

Preheat oven to 375° F. 

Wash berries and remove stems. Dice the strawberries into bitesize pieces. 

Insert paper liners into a muffin pan or mist the pan with baking spray. 

Combine flour through salt in a medium size bowl. Fold in strawberries and set it aside.

In a different bowl, cream butter and sugar together using a hand or stand mixer. Once the mixture is light and fluffy, beat in eggs, vanilla, and sour cream. 

Thoroughly fold in the flour mixture to create a batter. 

Spoon the batter into the muffin cups to the top. 

Bake muffins 20 – 25 minutes or until a toothpick inserted in the center of a muffin comes out clean. 

Cool for 5 minutes in the baking pan. Then remove them to a wire rack to finish cooling completely.

Store your strawberry muffins in an airtight container. They will stay fresh at room temperature for 3 days and can also be stored in the refrigerator for up to 1 week.

Here is a little from my romantic suspense set in New Zealand where a young woman who witnesses the aftermath of a crime is sent to a supposedly safe house.


Inching along the wall, Célie reached the window. She held on to the door jamb, a little island of security in a sea of fear. Then she stretched across and peered out. A featureless face stared back at her.

She screamed and jumped back, bashing her elbow on the laundry tub. 

Peaches lumbered to his feet, shaky and confused. 

The face was still there. No eyes. No mouth. No nose. 

Peaches staggered over to the door and snuffled. 

Mesmerized, Célie kept staring at that distorted face as she backed into a corner. 

Then the face moved, and a hand spread across the glass. The forefinger and thumb rubbed together. 

Flashes of memory seared her mind. 

She gasped, remembering that fearful morning when she’d discovered poor Occy’s disemboweled body. Stunned, struggling not to vomit, she’d been hovering over what was left of Occy when she sensed she was being watched. For a few precious seconds she had stared back at the creepy figure silhouetted in the early morning gloom watching her—just watching her. 

Then he’d rubbed his thumb and forefinger together covetously, as if he were contemplating the best way to eat her alive. 

And she’d bolted. 

And done her best to bury those memories.

A Recipe and Read: Piping Hot and Wonderful Minestrone Soup and a Romantic Suspense by Vonnie Hughes...

I've invited my Kiwi author friend, Vonnie Hughes from down under to share one of her favorite dishes in my virtual kitchen today. Since there's still a chill in the air, I thought this was the perfect choice to warm up our bodies and fill up our bellies. The stove is all yours, Ms. Vonnie...

This soup tastes great and is sure to be a crowd pleaser. It's a must in our house whenever the weather turns cold.

MINESTRONE SOUP
1 tbsp. butter
4 slices bacon, chopped or ½ lb. gravy beef, minced/ground
1 onion, chopped
½ lb. fresh tomatoes or 1 jar/can, chopped
1 carrot, scraped and chopped
1 potato, peeled and chopped
2 sticks celery or other seasonal vegetable, chopped
½ cup haricot beans that have been soaked overnight, green beans work too
3 tbsp. macaroni
3 tbsp. rice
3 tbsp. spaghetti
½ tsp. salt
Pepper to taste

Melt butter in a frying pan. Add bacon or meat and fry until crisp. Stir in onion and tomatoes.

Carefully pour mixture into a slow cooker or pressure cooker. Fill pot halfway with water. Stir in remaining ingredients.

Cook 2 hours in slow cooker or 15 minutes in pressure cooker.

Célie Francis ran faster than she ever had in her life. Fingers of fog rolling in from the sea grabbed at her as her feet alternately flew and stuttered over the uneven pavement of the ocean road.

Where was he? How much time did she have? The wash of the sea was a calm counterpoint to her harsh, frantic breathing. Above the sound of her thudding feet, the shriek of a bird pierced the air.

No, not a bird. Something was squeaking. Occy’s old bicycle.

He had found her.

Faster, Célie, faster, shouted the little man on the treadmill in her mind.

I can’t, she sobbed.

Fancy the consequences?

No God, no!

Then run faster.

But her aching legs could not obey. And on the roadway the relentless squeak, squeak kept pace with her.

Frantically she zigzagged, seeking a haven in the fog. It was barely dawn on the lonely North Auckland cliffs above the Pacific Ocean. No help anywhere.

Have to hide. Have to hide.

Her shoes slapped a rhythm.

Salty sweat stung her eyes. Ignore it.

The slap of her running shoes echoed then died in the mist. Died...

Her brain, tumbling in an endless whirl of fear and futile questions asked—-why Occy? Why had he killed a man this time?

Up ahead loomed a deep grey cloud of mist. Thank you, God. She blasted into the fog bank and the squeaking receded behind her. This is your chance, the little man said.

Veering off the sidewalk, she streaked across a pristine lawn and crouched behind a lavender bush. Her chest heaving, she struggled to gulp another breath of sodden air.

Squeeeak. He was back. This was it. Eyes streaming, she curled into a ball on the cold ground and waited.

Something yellow zinged past her face and tickled her arm. A needle-sharp sting pierced her elbow, then another. Bees, irritated by her invasion, were trying to drive her out. No you won’t. What’s out there is a lot worse than what you can do, bees. As the pinpricks tingled and burned, she pressed her lips together so hard that the muscles on the side of her face ached.

Louder now, the squeaking advanced and receded. He was casting up and down, looking for her. Please, please...

A sibilant whisper reached her through the clammy fog. “I know who you are, Célie. I know where you live.”
