Author in the Kitchen: A Warming Winter Dinner served by Cookbook Author Sloane Taylor...

Pull on your cozy attire and get ready for some comfort food that will warm you from head to toe. The Farmer's Almanac is predicting a snowy winter we'll not soon forget. Solution? Warm up your family with a hearty dinner that tastes great and satisfies the hungriest of appetites.

Chicken Pot Pie


CHICKEN 
1 lb. chicken breast, boneless, skinless
Celery chunks
Carrot chunks
Onion chunks
Tap water

Fill a medium-size saucepan with water. Add celery, carrots, and onion. Cover and bring to a boil. Add chicken. Cover pan. Turn off heat and let the chicken sit in the hot water 1½ hours.

Remove chicken from pan to a plate. Discard water and veggies. Don’t wash the pan. Allow breast to cool then cut off any excess fat. Slice meat into bite-size pieces.

FILLING 
⅓ cup butter
½ cup celery, sliced
½ cup carrots, chopped
⅓ cup onion, chopped
⅓ cup flour1
⅔ cups chicken stock
¾ tsp. garlic powder, not salt
¼ tsp. ground thyme½ tsp. dried sage
½ tsp. dried parsley
½ tsp. salt
Freshly ground pepper to taste
⅔ cup heavy cream*
1 cup frozen peas, thawed is fine

Melt butter in the same pan you used for the chicken breast. Stir in celery, carrots, and onion. Sauté on medium heat until veggies are semisoft and onion translucent, 7 – 9 minutes.

Stir in flour. Cook for 1 minute, stirring frequently.

Carefully pour in stock while stirring. Scrape pan bottom and sides to capture flour residue. Add garlic, thyme, sage, parsley, salt, and pepper. Stir in cream then simmer on medium low until mixture thickens, 5 – 10 minutes, stir often to prevent burning.

Add chicken and peas. Remove from heat and allow mixture to cool.

ASSEMBLING THE PIE
2 premade refrigerated pie crusts
1 egg yolk
1 tbsp. milk

Preheat oven to 425° F.

Follow the directions on the pie crust package to prepare the pan for a two-crust pie.

Scroop filling onto bottom crust. Lay the other crust on top. Seal the edges by pressing the two crusts together around the rim. Trim off excess crust.

Mix egg yolk and milk in a small bowl. use a pastry brush to spread mixture across the top crust including the rim. Score the top crust with 4 – 6 thin slices. This allows the pie to cook better by releasing a little steam.

Bake 10 – 15 minutes then remove from the oven then cover the edges with aluminum foil so they don’t burn. Return pie to the oven. Continue for 30 – 35 minutes longer or until the top is golden brown.

Allow the pie to cool 10 – 15 minutes before serving. This allows the filling to set properly.

*No need to run out to buy heavy cream. The following recipe is easy and works great for a any cooked dish that requires heavy cream.

Heavy Cream Substitute
¾ cup milk
⅓ cup butter 

Pour milk into a small bowl then set aside. Don’t use milk fresh from the fridge or this recipe won’t work right.

Melt butter in a saucepan over medium-low heat or in the microwave until melted. Allow butter to cool at room temperature.

Combine milk and butter with a hand mixer until well blended.

Use this substitute 1 for 1. Don’t use it as whipping cream. It won’t work.

Author in the Kitchen: Soup is On, served up by Helen Carpenter...

Now that winter has arrived in the Northern Hemisphere, the human residents of Carpenter Country have started thinking about soup. And quackers too of course. My family and I are duck fans, and ducks generally show up in our neighborhood this time of year. However, much as we like both, we restrain ourselves from combining soup and quackers.

Speaking of combining things, did you know January is National Soup Month in the USA? What we don’t understand is why April is national grilled cheese sandwich month. Those two celebrations belong together. Someone should right this wrong.

We think we’ll have soup while we work up a petition.

Won’t you join us in a bowl? It’s big enough for all.

Easy Potato Soup
1 tbsp. butter
4-5 potatoes, peeled and diced
Chopped or diced onion to taste
1 tbsp. cornstarch or flour
¼ cup water
2 cups water
1 cup milk (whole, evaporated, or 2%)
1 tsp. salt
1 packet chicken bouillon
Shredded cheese optional

Melt butter in 2 quart saucepan.

Add onions and potatoes and cook until soft (5-10 minutes).

Mix 1 tbsp cornstarch with ¼ cup water (pre-mixing prevents annoying lumps). Add cornstarch mixture, water, milk, salt, and bouillon to softened potatoes and onions in saucepan.

Bring to a boil, reduce heat and simmer 20-25 minutes.

Serve with a topping of shredded cheese and a chunk of fresh bread.

Bonus goodness:
Crave added richness? Substitute ½ cup whipping cream for half of the milk.

Are you a vegetable fan? Toss in the veggie of your choice, either frozen or fresh, when you add the milk and water. We like frozen carrots and corn. They add color and they cook right along with the potatoes.

Like things meatier? Put in leftover ham or chicken.

Bland potatoes? Mix in sweet pickle juice. Six teaspoons give the soup a little zing.

Want some zest? A ½ teaspoon dry mustard provides zip.

Need more soup? Add more stuff. The converse works too.

Fighting off vampires? Switch out the regular salt for a teaspoon of garlic salt. If you have a bad infestation, add ½ teaspoon crushed garlic to the soup and serve with a wood spoon.

Take the Chill Out of March with a Perfect Casserole to Celebrate St. Patrick's Day...

The perfect casserole for any occasion, especially holiday feasts like the upcoming St. Patrick's Day. These super scalloped potatoes compliment any main dish your serve at your table. Tender potatoes in a creamy onion sauce baked to golden perfection would make any mouth water. Whether you’re serving spiral ham, pork chops, poultry or beef, this tasty side-dish makes six servings to share with family, friends, or friends of friends. With a prep time of 25 minutes, cook time of 1 hour and 20 minutes, and a rest time of 15 minutes for a total of 1 hour and 45 minutes, you’ve got plenty of time to visit with your company, and enjoy a glass of your favorite libation. May I suggest a pint of green beer or perhaps a dram of Irish Whiskey? Slainte!

Super Side Dish Scalloped Potatoes

¼ cup butter
1 large onion, diced
2 cloves garlic, minced
¼ cup flour2 cups milk
1 cup chicken broth
½ teaspoon salt
¼ teaspoon pepper
3 pounds of white potatoes, sliced about ⅛” thick
Salt and pepper to taste

 Preheat oven to 350°F

Sauce

To make the sauce, melt butter, onion, and garlic over medium-low heat. Cook until onion is softened, about 3 minutes. Add flour and cook for 1-2 minutes.

Reduce heat to low. Combine milk and broth. Add a small amount at a time whisking to thicken. The mixture will become very thick, continue adding a little bit of liquid at a time whisking until smooth.

Once all the liquid has been added, bring to a boil over medium heat while continuing to whisk. Stir in salt and pepper and let boil 1 minute.

Grease a 9 x 13 baking dish. Place ⅓ of the potatoes in the bottom and season with salt and pepper. Pour ⅓ of the cream sauce over top.

Repeat layers ending with cream sauce. Cover and bake for 45 minutes.

Uncover and bake for an additional 35-45 minutes or until golden brown, and potatoes are tender. Broil for 3-4 minutes to obtain a golden top.

Allow to rest for 15 minutes before serving.

This casserole is also a wonderful side-dish to include at your holiday get-togethers too, making a great substitute for mashed or roast potatoes. Try it. You just might love it! Author in the Kitchen: Winter Warm Up Soup Served by Helen Carpenter...

Some like it hot, some like it cold, some like it in a pot nine days old. Remember the Mother Goose “pease porridge” rhyme? While today we may think of porridge as cereal, in the sixteenth century, “porridge” was a derivation of “pottage” or “potage” meaning cooking pot. “Chowder” also comes from the word pot, via the French “cauldron.”

However you like your soup—hot, cold, or nine days old—combining savory ingredients in a pot and letting the flavors mingle is a time-tested menu favorite.

But what if you want your soup NOW? Well, you’re our kind of person, and we have just the recipe for you. Using already cooked ingredients makes this soup a quick lunch, ready in twenty minutes or less.

Corny Ham Chowder
1 cup milk
1 can cream style sweet corn
1½ cups cooked ham, cut into chunks
1½ cups cooked potatoes, drained and cut into chunks (canned works too)
1 tsp. onion powder
1 cup (4 oz) sharp cheddar cheese, shredded
Green onion or scallion slivers (optional)
Salt or chicken bouillon to taste

Mix milk, corn, ham, and potatoes in medium pot. Cook, be sure to stir occasionally until heated through.

Add cheese. Cover pot and let cheese melt completely.

Serve with a chunk of hearty bread.

Bonus Goodness:

Grass Skirt is Optional with this Hawaiian Crock Pot Dish Served by Romantic Suspense Author Vonnie Hughes...

This easy and delicious crock-pot supper is the perfect dish to break into the autumn season, and is much cheaper than booking a trip to Hawaii. SWEET HAWAIIAN CROCK-POT CHICKEN
2 lbs chicken tenderloin chunks
1 cup pineapple juice
½ cup of brown sugar
⅓ cup of soy sauce

Combine all ingredients together and cook on low in your crock-pot (slow cooker) for 6 hours. That’s it!

Because this does not contain vegetables you need to serve this either with a crisp green salad that contains red bell peppers for colour, or with a couple of vegetables such as kale and shallots tossed for a minute in garlic infused olive oil so that the crispness contrasts with the chicken.

A Recipe and Read to Ring in the Fall Season by Cozy Mystery Author Janis Lane...

This is a favorite of mine to use when I have leftovers. Actually, I plan so I have the right ingredients, but don’t tell my secrets.

In late summer when veggies are in top form, the sparkling green of fat bell peppers has my mouth watering. Fry up a bit more summer sausage for breakfast than you need. Pull out of the freezer that small bit of ground beef you cooked up with onion. Add a bit of chopped green onion, a dash of garlic salt. Mix with tomato soup which is undiluted. Use a ½ can if you only make up two; a whole can for four peppers. Add 1½ cups of white or wild rice that you had left over and tucked into the freezer. Voila! You are ready to assemble.  All ingredients are already cooked, so you are just baking the peppers, microwave or oven.  

Now if you don’t have leftovers then this is the recipe, that serves 4, to follow. 


STUFFED PEPPERS
4 green peppers, red and yellow are good too
½ cup summer sausage, cooked, drained
½ cup ground beef, cooked, drained
1½ cups cooked wild or white rice
1 can tomato soup, regular size
Dash of garlic powder
Pinch of salt and pepper to taste
2 tbsp. chopped green onion
Freshly grated Parmesan cheese
Parsley garnish, optional

Preheat oven to 350° F. 

Cut the top off peppers and discard stems, chop tops into small sizes and leave in bowl.  Remove seeds from peppers and arrange in baking dish.

Mix remaining ingredients in bowl with chopped tops and then spoon into peppers. Cook for about 30 minutes. Sprinkle with the parmesan.  May be refrigerated and served next day. Warm in oven or microwave. 

Late summer harvest presents many choices for salads and dessert. A side dish of fruit and a slice of cheese (so many excellent selections). Corn bread is also a great taste with the peppers.

Home-Style Dinner in a Bowl and a Taste of Two Young Adult Fantasy Adventure Series by Sharon Ledwith...

This one-pot Ham and Split Pea Soup is tremendously heart-warming and comforting, and absolutely ideal to make with that leftover holiday ham. Healthy and delicious this hearty soup is loaded with tender split peas, tasty ham, and lots of veggies for lunch or dinner! Soak the split peas the night before for a total of 10 hours before you begin. With a prep time of 15 minutes and a cook time of 2 hours, 5 minutes, this mouth-watering ‘meal in a bowl’ serves 6 of your closest pod members and freezes easily. Perfect for those looking to shed those pounds and want to eat healthier. I’d say that’s a win-win, wouldn’t you?

Home-Style Ham and Split Pea Soup 

2 cups dried split peas, green or yellow
2 tsp. olive oil
1 large onion, chopped
3 ribs celery, chopped
2 medium carrots, peeled and chopped
3 cloves garlic, minced
4 cups chicken broth, low sodium or no sodium added
4 cups water
1 bay leaf
½ tsp. dried thyme
Salt and pepper to taste
1½ pounds meaty ham bone or ham shanks

Soak the split peas. Add the split peas to a pot and cover with 2 quarts of cold water. Soak overnight.

Sauté vegetables. Heat the olive oil in a large pot over medium heat. Add the onion, celery, carrots, and cook for about 3 to 5 minutes until the vegetables soften and the onion is translucent. Add the garlic and sauté for another 30 seconds or until aromatic.

Add remaining ingredients. Pour in the chicken broth, water, and stir. Add the split peas, bay leaf, dried thyme, and ham bone. Bring to a boil over medium-high heat then reduce the heat to low. Cover and simmer for about 1 ½ hours.

Finish the soup. Carefully remove the bone from the soup, cut off the meat, and dice it. Return the meat back to the soup. Cook on low for another 30 minutes or until soup has thickened. Discard bay leaf and serve.

NOTES:

Always rinse your peas thoroughly before soaking or cooking to remove any dirt particles.

If it looks like your soup is too watery, remember the longer it cooks, the thicker it gets.

Add a little smoked paprika to the soup to enhance the smokiness of the ham.

If you don’t have enough ham, add some cooked bacon to amp up the flavor.

This soup can be kept refrigerated for about a week, or frozen for up to 3 months.

Author in the Kitchen: A Sausage and Rice Casserole Recipe and Romantic Read by Cozy Mystery Author Janis Lane...

This is an easy casserole that may be prepared the day before and warmed up on a busy day when dinner should be quick and easy. A box of rice tucked in the pantry is always a great idea. Changing the flavor makes it your own personal recipe. I’ve made it with a can of stewed tomatoes and a bit of garlic. You’ll find your own favorites to add. Summer sausage gives this dish a Southern flavor. Don’t forget to call out at least two y’alls before the first forkful. 


Sausage and Rice Casserole
1 box Wild Rice
2 onions, chopped
¼ cup green peppers, chopped
1 lb. bulk ground sausage
1 small can sliced mushrooms
2 cans cream chicken soup
1 can mushroom soup
1 cup water
1 small can water chestnuts, drained 
Slivered almonds, toasted and drained

Preheat oven 350° F.

Cook rice as directed on package, set aside. 

Sauté onion, peppers and sausage until meat is browned. Drain. Stir remaining ingredients, except almonds, with sausage mixture; turn into 9 X 13 baking dish. 

Bake 30 – 40 minutes. Sprinkle with almond slivers then serve.

EXCERPT
As she entered the room, a long arm snaked out and pulled her swiftly toward a broad chest. Her face was again covered with kisses that trailed down her face, sidetracked to explore a curled ear with a sip on a tiny lobe, and continued a path of kisses until it landed against her lips, which were blossoming into a reluctant smile.

“Adam.”

The sandy-haired giant lifted his head from the places he had been attending and settled his piercing blue eyes on her green ones with a satisfied sigh.

“Eve?”

He sat down in a kitchen chair and pulled her onto his lap, wrapping her in a warm embrace and tucking her head on his shoulder. She snuggled contentedly against him. What a wonderful way to greet the day, she thought. Everyone should have a handsome blond giant to cuddle with . . . She could feel herself drifting off.

“Good morning, Abby, my tree sprite. Did you sleep well? I thought you might stay snuggled in bed this morning after such a late night.”

“Adam.” She took a deep breath inhaling the familiar fragrance that she loved. It was all Adam who was so dear to her. She rubbed her face into his shoulder and allowed him to cuddle her for a minute more. Her body relaxed against him, her hand half encircled his rock hard forearm, but her mind struggled with her problem. She knew she had to nip this in the bud if she were ever to have peace. This was exactly what she had feared when she resisted moving in with him, even though she knew she loved him.

“Adam.” She turned her head to stare into his intensely blue eyes, and then shut hers. There was always the danger of falling into those loving pools of blue if a girl were not careful. She knew from experience how mesmerizing they could be.

“You’ve got to control that dog. I know he’s young and means no harm, but you promised to train him. I can’t keep buying new sneakers every single day.” She felt Adam’s deep chuckle before she heard it. His chest erupted in those sounds that brought a smile to her face in spite of her annoyance with the situation.

A Recipe and Read: A Taste of Mexico and an Inspirational Romantic Suspense from Catherine Castle...

The other day I wanted a quick easy meal, so I peeked into the pantry to see what I had on hand. I found cans of chicken, green chiles, corn, black beans and cream of chicken soup, and some tortillas, so I set out to create something. Here's what I came up with. We liked it, and I hope you will too.

Quick Oven Quesadilla


2-12.5-oz canned chicken, drained and broken up
1-4-oz can diced green chilies
1-2.5-oz can sliced black olives, drained
1-15-oz can black beans, drained and rinsed
1-11-oz can whole kernel corn, drained
1 can cream of chicken soup
¼ or less cup water, start with a smaller amount. You only need enough water to mix soup other ingredients.
1 cup finely shredded Mexican style cheese.   
1 to 1½ tsp. taco seasoning, or to taste if you like it spicier.
1 cup shredded cheddar cheese
2 high-fiber large tortillas (or corn tortillas) or enough to fit a straight sided cake pan, or 2 high-fiber street tacos to make individual servings in a smaller pan.

Preheat oven to 350° F

In a skillet over medium high heat brown the tortillas on both sides.

While tortillas are browning, mix chicken, corn, beans, chilies, olives, soup, cheddar cheese and water. Heat the mix in a large saucepan stirring until well mixed and beginning to bubble.

Lightly spray the bottom of a cake pan or baking sheet. Lay one tortilla in the pan, top with about ¼ cup mix (for a large tortilla, less for smaller tortillas) onto top of browned tortilla, spreading mix almost to the edge. Top with ¼ cup of finely shredded Mexican cheese. Repeat with other tortilla and 3/4 cup mix. Save left over mix for another day’s use, or you can double the tortillas and make a bigger meal the first time.

Bake about 10-15 minutes or until cheese on top has melted and you can see filling bubbling. (I’ve also baked this for a shorter time at a higher temp when was in a hurry.) Turn off oven and switch to the high broil setting on the oven and broil until cheese on top begins to brown.

Remove from oven. Cut and serve with shredded lettuce, chopped tomatoes, onions, guacamole, salsa or other Mexican side toppings.

If you want to make several stacks at a time lay the base tortillas on a baking sheet and assemble as many as your ingredients allow. Number will depend on the size of your tortillas.

If you only make one stack, or 2 smaller individual servings, the first time you can use the remainder of the filling for a second quesadilla meal or as filling for enchiladas. It will make about 4-6 enchiladas depending on the size of your tortilla. Warm your ingredients before assembling the stacks or enchiladas to cut down on heating time in oven. Make a cheese sauce, or other Mexican sauce to cover the enchiladas and top with shredded cheese. Heat in a 350° oven until cheese has melted and is beginning to brown.

This November, Get Stuffed with a Classic Recipe and a Young Adult Read...

Ready for an easy take on a classic recipe? Then let’s get stuffed! Of course, I’m talking about gorging on my Savory Stuffed Peppers. The bell pepper is an excellent vessel for stuffing meat, rice, and, of course, cheese. It's strong enough to hold its shape in the oven, and the flavor is subtle enough to go well with just about anything. This perfect comfort food will fill you up, and keep you satiated for hours. Plus, it’s a great recipe to cook in your home, cottage, or camper any time of the year. With a prep time of 15 minutes tops, and total time of 1 hour, 20 minutes, these tasty mega-morsels will serve 6 of your famish family members or friends. Serve with a salad of your choice and a glass of your favorite red or white wine. Cheers!


Savory Stuffed Peppers

½ cup uncooked rice
2 tbsp. extra virgin olive oil, plus more for drizzling
1 medium onion, chopped
2 tbsp. tomato paste
3 cloves garlic, minced
1 lb. (454 gram) ground beef (or swap out for ground pork, chicken or turkey)
1-14.5 oz. can diced tomatoes
1½ tsp. dried oregano
Kosher or sea salt
Freshly ground black pepper
6 large bell peppers, tops and cores removed
1 cup shredded Monterey Jack cheese
Freshly chopped parsley, for garnish
 
If you desire, add a spicy kick to your stuffed pepper with a few splashes of hot sauce. 

Preheat oven to 400° F (200° C). 

In a small saucepan, prepare rice according to package instructions.

In a large skillet over medium heat, heat oil. Cook onion until soft, about 5 minutes. Stir in tomato paste and garlic and cook until fragrant, about 1 minute more. Add ground beef and cook, breaking up meat with a wooden spoon until no longer pink, 6 minutes. Drain fat.

Return beef mixture to skillet, then stir in cooked rice and diced tomatoes. Season with oregano, salt, and pepper. Let simmer until liquid has reduced slightly, about 5 minutes.

Place peppers cut side-up in a 9” x 13” baking dish and drizzle with olive oil. Spoon beef mixture into each pepper and top with Monterey Jack cheese, then cover baking dish with foil.

Bake until peppers are tender, about 35 minutes. Uncover and bake until cheese is bubbly, 10 minutes more.

Garnish with parsley before serving.
