Now that School's Back, Cookbook Author Sloane Taylor Serves Up a Pizzeria Perfect Recipe...

This easy recipe is perfect for busy weekends when all you want is a tasty meal and a cold beverage. I use sausage, but don’t let that stop you. Add on whatever toppings suit you right after the meat. The cooking time remains the same. The secret to making this pizza extra good is the grated Parmesan cheese. Our grandson, Dakota, works at an Italian restaurant and offered this suggestion. GREAT addition.

MENU
Quick & Easy Pizza
Salad with Creamy Garlic Dressing
Dry White Wine – Pinto Grigio or Cold Peroni Beer
 
Quick & Easy Pizza

1 lb. Italian sausage, preferably bulk type
1 tube refrigerated pizza dough
2 oz. tomato paste, freeze remainder to use in other recipes
Chicken stock, not broth
1 tbsp. garlic powder, not salt
1 tbsp. oregano1 tbsp. basil
1 tsp. sugar
Freshly ground pepper to taste
Parmesan cheese, grated
Olive oil to drizzle
1 ½ cups mozzarella cheese, shredded 

Preheat oven to 425°. 

Place sausage in cold frying pan set over medium heat. Break into small chunks as you sauté it until no longer pink, about 15 minutes. Adjust heat so as not to burn sausage. If you use link sausage then squeeze it from the casing before frying. 

Scoop tomato paste into a measuring cup. Stir in enough chicken stock to bring the blend to just under two-thirds cup. Mix in garlic, oregano, basil, sugar, and pepper until well blended. You may need a little more stock to make the mixture more sauce like. Don’t add too much or your crust will soggy. 

If you use a pizza pan then sprinkle just a little cornmeal or flour on. This helps absorb the moisture while baking to maintain a crisp crust. It isn’t necessary with a pizza stone. 

Spread out the dough on the pan/stone. Smear sauce on top and spread to the edges. Grate a healthy amount of Parmesan over the dough. 

Cascade sausage and your other toppings onto the pie. Drizzle with oil. Bake 12 minutes. 

Remove pan/stone from oven. Scatter mozzarella across the top. Turn off the oven then set the pizza inside. Allow pizza to remain until the cheese is melted, about 5 minutes. 

Cut into squares and enjoy!

This Canadian Thanksgiving, Get Together with Family and Friends, and Change Up the Menu with an Italian Slant...


The one theme I love to weave throughout my two-book series is the importance of family. We hold each other tight when times are tough, and on the flip side we can tear each other apart during times of stress and worry. Food seems to be the source of comfort in all family matters.

Meals bring us together to celebrate, cry or support each other in so many ways. The characters in The Last Timekeepers young adult time travel adventure series were originally thrown together, despite their differences, and have had to learn how to act like a family by trusting and working with one another through each Timekeeper mission. In my Mysterious Tales from Fairy Falls teen psychic mystery series, the main characters change with each book, but the setting remains the same, I focused on the tribal matters of the town, and what’s best for the whole. Again, my characters must overcome differences and obstacles in order to keep Fairy Falls’ sense of community safe and intact.

I recently came across my father’s lasagna recipe, and a wave of emotions and memories rushed through me. I loved his meaty take on a popular Italian dish. My dad’s been gone since 1983, and I still miss him deeply, especially when our family gets together over holidays, events or Sunday dinners. So, I thought I’d share his special family recipe with you with the hopes of adding this mouth-watering pasta entree to your menu one day. Bon appetite!

Dad’s Mouth-Watering, Meaty Lasagna

1 lb. lean ground beef
½ lb. ground pork
1 can (28 oz.) whole tomatoes
1 can (12 oz.) tomato paste
2 tsps. garlic salt or powder
1½ tsps. oregano leaves
1 tsp. basil leaves
2 cups cottage cheese
½ cup grated Parmesan cheese
3 packages (4 ounces each) shredded mozzarella cheese
12 oz. lasagna noodles, cooked and well drained (we use precooked noodles)
½ cup grated Parmesan cheese

In a Dutch over or large skillet, cook and stir meats until brown. Drain off fat. Add tomatoes; break up with fork. Stir in tomato paste, garlic, oregano and basil. Heat to boiling, stirring occasionally. Reduce heat, simmer uncovered 20 minutes or until mixture is consistency of spaghetti sauce.

Preheat oven to 350° F (175° C).

Stir together cottage cheese and Parmesan cheese. Set aside 1 cup meat sauce and ½ the mozzarella. In ungreased baking pan, 13 x 9 x 2 inches, alternate layers of ⅓ each noodles, remaining meat sauce, remaining mozzarella, and cottage cheese mixture.

Spread reserved meat sauce over top. Sprinkle with Parmesan cheese. Scatter reserved mozzarella across lasagna.

Bake uncovered 45 minutes. Let stand 15 minutes before cutting. Cut into 3-inch squares.

Serves 8 of your hungriest family members or friends.

And there you have it! A feast fit for any family who loves getting together to share good food, and create happy memories. Author in the Kitchen: Pulled Pork Feast by Author Helen Carpenter...

Anticipation. That's the title of a great song, the jingle for an ancient advertisement, and a marketing tool for authors. Oh, and anticipation makes good food better too. What more could you ask of a word?

You already know the classic song (thanks, Carly Simon!), and if you're of a…ummm…certain age, you probably remember the ketchup commercial too. (Sorry if the jingle is now an earwig! Confess—you're humming, aren't you?)

As far as making good food better—our barbecue pulled pork recipe is DEFINITELY worth waiting for! Put all the ingredients together, then grab a good book to read while you're anticipating the meal to come.

PULLED PORK
½ cup ketchup
1 ½ cups barbecue sauce, divided
1 cup water
1 onion, chopped (or a similar amount of frozen chopped onions)
1 tsp. garlic, chopped
3 ½ pound pork roast (a shoulder cut works well)
Hamburger buns

Mix ketchup, ½ cup barbecue sauce, and water in a small bowl. Stir in the onions and garlic.

Set pork roast in the crock pot and pour sauce mixture over it, coating the meat well. The liquid should almost cover the meat. Add more if necessary. Cook on low for 10-12 hours.

Remove the pork roast from the crock-pot, let cool, and shred with a fork. Set aside.

Empty the liquid from the crock-pot. Put the pulled pork back into the crock-pot, add the remaining barbecue sauce, and mix well.

Cook on low for two more hours; then reduce setting to warm until ready to serve.

Serve on buns.

Tips and Tricks
Crock pots are ideal for tenderizing less expensive cuts of meat. The longer the cooking time, the more tender the meat becomes.

Feel free to add more sauce to the first cooking; meat cooked in liquid is moister.

For an added crunch, serve chips of your choice as a side dish.

If you want to serve the pulled pork for lunch, set up the crock pot to cook overnight.

A Quick Supper for Those Lazy Hazy Days of Summer...

Summer's a busy time. Need a quick meal for the next long weekend or during the week? I’m talking insanely quick and economical to make. Got to get your child to a practice or activity? Perhaps there’s a Zoom meeting scheduled just after dinner. No problem. I’ve got your back with this tasty Roasted Red Pepper Pasta meal fit for a family of four. Add sausage or chicken into the mix, and you’ve got yourself a hearty Italian meal that fills you up for the night. This whole meal takes about 20-30 minutes to prepare, which gives you plenty of wiggle room to make that meeting or taxi the kids to their activity. Serve with a side salad and glass of your favorite wine (if that meeting was cancelled), to celebrate the end of the day in style.


Roasted Red Pepper Pasta
4 cups uncooked rigatoni or penne pasta
1 tbsp. olive oil
1 medium onion,finely diced
2 cloves of garlic, minced
1 can (284 mL/9.6 ounces) can of Campbell’s® Condensed Roasted Red Pepper and Tomato Soup
½ cup milk
¼ cup 35% whipping cream, or heavy cream 
¼ tsp. fresh ground pepper 
¼ cup Parmesan cheese
2 tbsp. oregano, optional
2 tbsp. chopped fresh parsley, optional
¼ cup chopped fresh basil leaves, optional

Other Optional Ingredients
1lb. Italian sausage or cubed boneless, skinless chicken breasts
Fresh red bell peppers
Red pepper flakes

Prepare rigatoni or penne according to package directions. Drain and keep warm.

Spray skillet with oil and sauté sausage (or chicken) over medium-high heat, about 5 minutes or until cooked through; remove from pan.

While pasta is cooking, prepare the pepper pasta sauce. In a nonstick skillet, heat olive oil over medium-high. Cook the onion and garlic for 3-5 minutes, stirring often, or until lightly browned.

Add soup, milk, cream, sausage (or chicken) and pepper (optional); gently whisk until smooth and simmering. Reduce heat, simmer 2-3 minutes or until sauce has thickened slightly.

Stir Parmesan and fresh basil, parsley, and oregano into pasta sauce. Toss sauce with hot pasta and serve with more Parmesan, if desired. Then, enjoy the fruits of your labors!

Author in the Kitchen: Homemade Blueberry Ice Cream served by Helen Carpenter...

I have a confession to make. Sometimes…sometimes here in Carpenter Country I am not actually sitting at my computer all day working diligently. That's right. Sometimes I…I go OUTSIDE! Into the SUNSHINE!

One of those special occasions took place in early May when my husband and I headed out to the u-pick field. Because we are serious blueberry pickers, we brought home enough berries to enjoy a few bowls fresh-from-the-field, to put a couple of handfuls on top of cereal, and to make biscuits, bread, buckles, cheesecake, coffee cake, crumbles, cobblers, donuts, muffins, pies, pancakes, scones, and ICE CREAM!

Are you screaming yet for blueberry ice cream? Us too. In fact, we're going to take a break and sample a bowl. Here's the recipe in case you want a break from your own busy day. You will need an ice cream maker (ours makes about 1½ quarts) and a blender or food processor for this recipe.



HOMEMADE BLUEBERRY ICE CREAM

1½ cups fresh blueberries, washed, and dried (slightly less than a pint of fresh, or you can use frozen berries if you drain them well)
1 pint (2 cups) heavy whipping cream
1 cup milk (whole or reduced fat, your choice - coconut milk is a delicious substitute)
½ cup sugar (more or less to suit your own sweet tooth -- or teeth)
½ tsp. vanilla extract

Place rinsed blueberries in the blender or food processor and process for a minute or less.

Add the whipping cream, milk, sugar, and vanilla extract to the pureed blueberries in the blender.

Process 10-20 seconds, just until mixed - not too long, or you’ll have whipped cream.

Pour the mixture into the ice cream maker and churn for 20 minutes.

If you like soft, milkshake-type ice cream, pass out the spoons and dig in. For firmer ice cream, scoop the ice cream into a container and freeze two hours.

Excite Your Taste Buds with a New Dish by Time Travel Romance Author Stella May...

This is an easy version of a very popular dish among Armenians and Azeris named Kutab which is stuffed flat bread. In a classic version, you have to make a dough from scratch. But I make my Kutabs with soft large flour tortillas you can find in any supermarket. This is so easy to make, any novice (and any man) can do it. Plus, it’s fast and a very filling dish. 

There are several different stuffings for Kutabs. The most popular is Green Stuffing, a combination of different herbs. There is also Meat Stuffing that is delicious. The recipe I’m sharing makes 10 large or 12 medium Kutabs. 


Kutab Green Stuffing
1 bunch cilantro
1 bunch parsley1 bunch dill
1-2 bunches green onions, depends on size
1 bunch baby spinach
2 – 3 tbsp. lemon juice
½ cup olive or sunflower oil
Salt and pepper to taste
1 egg 

Wash and dry all herbs, then chop coarsely. Sweep them into a large bowl. Add lemon juice, oil, salt, and pepper. Mix well.

Beat the egg in a small bowl.  Fill half of a tortilla with stuffing, leaving a little bit space at the edges. I measure it by handfuls and use 2 handfuls for each Kutab. Use a brush to apply egg to the edges. Fold tortilla in half and then press with your fingers to make the edges stick together.

Pre-heat a large skillet. Add a little oil. The classic version calls for a dry pan, but my family prefers the Kutabs fried in avocado oil. Olive oil works well, too.

Cook on medium heat until both sides are golden brown. Makes perfect lunch or dinner. We eat it with feta cheese and plain yogurt. 

Kutab Meat Stuffing

1 – 1½ lb. finely ground meat
1 large onion2 – 3 garlic cloves
Salt and pepper to taste
½ cup cold water
1 egg 

Use a food processor mash onion and garlic. Add already ground meat. Mix well together. Add salt, pepper, and water.

Instead of greens, spread meat on half of the tortilla, seal with beaten egg, and then cook per the Green Stuffing instructions.

For meat Kutabs, you can use any sauce.  Works perfect with marinara.

Dig into a Spicy Chili Recipe and a Hot YA Time Travel Adventure Read...

One of the favorite dishes of armchair warriors, chili has so many combinations and gastric consequences, I’m sure it could be deemed as a weapon of mass destruction. Sports fans absolutely love their chili, especially when tailgating with other like-minded souls. We’ve discovered one recipe that’s a sure-fire way to keep you warm inside and out, while waiting for your team to get the game started.

Make ahead the day before and reheat or prepare on the fly, this spicy version takes 30 minutes to prep, cooks for 2 hours, and serves 12 of your closest blood-thirsty family or friends. A warning: have plenty of water or your preferred adult beverage on hand, along with a stack of napkins to not only wipe your mouth, but soak up your tears.

Game-Face Tailgate Chili

2 pounds ground beef chuck
1 pound bulk Italian sausage (use hot Italian if you love it spicy)
3 (15 ounce) cans chili beans, drained
1 (15 ounce) can chili beans in spicy sauce
2 (28 ounce) cans diced tomatoes with juice
1 (6 ounce) can tomato paste
1 large yellow onion, chopped
3 stalks celery, chopped
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
2 green chili peppers, seeded and chopped
1 tablespoon bacon bits
4 cubes beef bouillon
½ cup beer
¼ cup chili powder
1 tablespoon Worcestershire sauce
1 tablespoon minced garlic
1 tablespoon dried oregano
2 teaspoons ground cumin
2 teaspoons hot pepper sauce (e.g. Tabasco or Frank’s)
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon white sugar
1 bag of nacho chips
1 (8 ounce package) shredded Cheddar cheese

Heat a large stock pot over medium-high heat. Crumble the ground chuck and sausage into the hot pan, and cook until evenly browned. Drain off excess grease.

Pour in the chili beans, spicy chili beans, diced tomatoes and tomato paste. Add the onion, celery, green and red bell peppers, chili peppers, bacon bits, bouillon, and beer. Season with chili powder, Worcestershire sauce, garlic, oregano, cumin, hot pepper sauce, basil, salt, pepper, cayenne, paprika, and sugar. Stir to blend, then cover and simmer over low heat for at least 2 hours, stirring occasionally.

After 2 hours, taste, and adjust salt, pepper, and chili powder if necessary. The longer the chili simmers, the better it will taste. Remove from heat and serve, or refrigerate and serve the next day.

Ladle into bowls and top with shredded Cheddar cheese. Serve with nacho chips for dipping.
