Author in the Kitchen: Ramp up Halloween with this Cheese Ball Pumpkin Appetizer by Helen Carpenter...

October is National Pumpkin month, but we think such a beautiful fruit should get more than just one month of notoriety. So smile, say cheese, and make your own yummy appetizer for Halloween or any holiday get-together.

Cheese Ball Pumpkin

2 8-ounce packages cream cheese
4 ounces crumbled feta or blue cheese
4 ounces shredded sharp cheddar or pepper jack cheese
2 tsp. Worcestershire sauce
1 tsp. prepared mustard
½ tsp. onion powder
Paprika
The stem of a green bell pepper

Place all the cheeses in a large bowl and let soften to room temperature.

When cheese is soft, add Worcestershire and mustard. Blend with electric mixer or food processor on low speed. Scrape bowl and beat blended mixture on medium speed 1 or 2 minutes more until well mixed (do not over-beat).

Turn the mix onto plastic wrap. Pull the wrap up and secure with a twist tie. Shape the wrapped mixture into a ball. Score the pumpkin “ribs” onto the cheese ball with your fingertip or a flat knife.

With the plastic in place, set the cheese ball in a bowl and refrigerate for 4 hours or overnight.

Before serving, sprinkle with paprika and add a bell pepper stem to top.

Keep refrigerated until the crowd arrives, then serve with assorted crackers.

Celebrate Halloween with a Slice of Pumpkin Spice Cake and Romantic Thriller by Author Tina Griffith...

Halloween and November are my things. I love every spooky, creepy, and wonderful thing about October and all the good food of November. One of my favorite treats is the cake I’m sharing with you today. I used to make it with my kids. Now my grandbabies join me in the kitchen. Use any pan you like. I’ve baked this cake in a Bundt pan, a 13 x 9-inch pan, cupcake tins, and in three separates shape/sizes for freezing. It’s so easy to prepare and will fill your home with a wonderful aroma.

 

Pumpkin Spice Cake
1 spice cake mix box
1 cup pumpkin puree
1 tsp. pumpkin spice
Raising, walnuts, or blueberry jam, optional
 
Follow package instructions for egg, oil, and water amounts along with baking temps and time.
 

Cream Cheese Frosting

8 oz. cream cheese, room temperature
½ cup butter, room temperature
3 cups icing sugar – Confectioner’s sugar
1 tsp. vanilla extract

⅛ tsp. salt
 
Cool cake completely before frosting. This helps stop crumbs from mysteriously appearing all over your frosting.

The Perfect Pairing for Halloween: A Chocolate Recipe and Children's Read by Tina Ruiz...

Morning or afternoon, everyone. I want to share this chocolate hummus dip/spread recipe with you. The photo is stock because I kind of made a mess in my kitchen and the picture I took doesn't look as appealing as this one. Maybe because I couldn't stop taking spoonfuls out and shoving this mixture into my mouth. LOL! Anyway, while I've made hummus before, I've never made a chocolate version. Already I think it's fabulous on the chocolate chip pancakes I also made this morning. Next, I’ll try it on toast for lunch today.

On A Side Note - I am a girl who likes to freeze things, and pancakes are no exception. Package them in twos, or enough for one serving, with a parchment sheet in between them. This makes it easier when you want to separate them later. To reheat, pull them apart, and either throw them in a frying pan, or on a plate and slide them into the microwave oven for 2 minutes. Easy peasy.

Back to the hummus. Here's the recipe for the healthy version I make.

 

Chocolate Hummus

15 oz. can of chickpeas

2 tbsp. aquafaba (chickpea water)

½ cup cocoa powder

¼ cup maple syrup

½ cup peanut butter

1 tsp. vanilla extract

½ tsp. salt

Open a can of chickpeas and save 2 tablespoons of the water, also known as aquafaba, then drain the can.

Add chickpeas, aquafaba, and the remaining ingredients to a food processor. Blend until smooth.

Since I have your attention, I'd like to announce my latest Halloween children's book - A Haunting Birthday Party available on Amazon. This is the second children's book I've written with a Halloween theme. A Halloween Party was book one.

As I promised my grandchildren, and others who truly enjoyed the first Halloween Children's Book, this one also contains silly character names. Walter Melon (water melon) is the magician, Eve Ning (evening) is the cashier, Miss Turi (mystery) is another waitress, and Mr. I. Ball (eyeball) is the manager of the restaurant.

As you can see, this is a fun treat for young and old alike. I'm excited for the world to see my second Halloween children's book.

Recipe and Reveal: Mouth-Watering Rouladen and Kidlit Cover Reveal for A Haunting Birthday Party by Tina Ruiz...

I was born in Germany where my mother frequently filled our home with the most amazing aromas. This is one of my favorite recipes and I want to share it with you.

Rouladen - Braised Stuffed Beef Rolls

6 slices top round steak, 4 x 6 inches, sliced
½ inch thick 6 tsp. German or coarsely ground mustard
½ cup onion, chopped fine - divided
5 garlic cloves, chopped fine
3 dill pickle spears cut in half lengthwise
Freshly ground pepper to taste
Toothpicks or kitchen twine
3 tbsp. lard or vegetable oil
2 cups water
2 tbsp. flour
1 tbsp. butter

Preheat oven to 325° F.

Place meat between 2 pieces of cling wrap or waxed paper. Gently pound meat to ¼ inch thick. Be careful not to tear the meat.

Spread mustard along meat slices. Sprinkle on ¼ cup onion and garlic. Lay a pickle piece at the bottom of each roll or the narrow end.

Roll meat into a cylinder starting at the pickle end. Pierce with toothpicks to hold together or tie with twine.

Brown meat on all sides in a medium size frying pan. Lay rolls in a roaster pan.

Add water to the frying pan and bring to a boil, scraping the sides and bottom to collect all the meat bits. Whisk in four and butter. Pour this mixture over the meat rolls.

Bake 1 hour or until meat is fork tender. Remove toothpicks before serving.

If you prefer a thicker gravy, combine 2 -3 tablespoons flour in ½ cup water. Bring to a boil in a small saucepan. Cook, stirring constantly, to your desired consistency. Season with salt and pepper then stir into roasting pan gravy.

Boiled potatoes or dumplings along with red cabbage make this meal complete.

Crab Dip Pretzels

1 (3 ounce) package cream cheese
½ cup mayonnaise
1 tbsp. horseradish
½ tsp. minced garlic
2 tbsp. minced onion
1 tbsp. lemon juice
½ tsp. hot pepper sauce
1 (8 ounce container) jumbo lump crabmeat (not canned)
white pepper to taste
4 soft pretzels
2 cups shredded Colby-Jack cheese

PREHEAT oven to 350° F (175° C).

BEAT cream cheese, mayonnaise, and horseradish in a large bowl until smooth. Stir in garlic, onion, lemon juice, and hot pepper sauce.

GENTLY fold in the crabmeat, and season with white pepper to taste. Spoon mixture evenly over the pretzels, and sprinkle each with ½ cup shredded cheese.

PLACE pretzels in oven until cheese is melted and the topping bubbles, about 20 minutes. Enjoy!

Melted Witch Pudding Parfaits

Vanilla Snack Pack pudding cups
Green food coloring
Brownies, crumbled into smaller pieces
Oreos, crushed
Reddi Whip Whipped cream
Halloween sprinkles

Dye the vanilla Snack Pack pudding cups green. This can be done in each individual pudding container or transfer all of the pudding to a bowl and then add the green food coloring until you get your desired color. Set aside.

Assembling the Parfaits
Layer brownie pieces in the bottom of each glass. Divide the brownie pieces evenly among the parfaits.

Spoon on a layer of whipped cream.
 
Add the crushed Oreos.

Ladle the pudding on, filling each glass full.

Add Halloween sprinkles and top with the witch's legs.

For best results, enjoy these parfaits within a few minutes of making, otherwise the ingredients can become soggy.

Witch's Legs

Cut paper straws desired length, about 4½ inches long. HINT - don’t cut them too short or you won’t have enough straw to stick into your parfait.

On one end of your paper straw, make two small slits across from each other, this is where will you put the shoe. Repeat this process until all the legs are assembled.

Draw shoes on the black paper, cut out, and then insert in the slits on the straws.
