Author in the Kitchen: Sweet Treat from the Deep South and a Sultry Southern Read by YA Paranormal Author Leigh Goff...

Here is a dessert I confiscated and made my own. This New Orleans treat is perfect on a special night for two as well as holiday gatherings and everything in between.

Here are a few tips to make preparing this dessert easier:

Soak the raisins in bourbon before you start this recipe. You can even soak them a day or two ahead.

The bread you use should be a little dry. If the bread you are using is fresh, after you cube it, spread it out on a sheet pan and put it in a 200° F oven for 10 minutes.

Go easy on the bourbon sauce. It is strong! But so delicious.

Bread Pudding
1 cup raisins
¼ cup bourbon whiskey
1 loaf French bread, at least a day old, cut into 1-inch cubes
1 qt. milk
3 large eggs
2 cups sugar
2 tbsp. vanilla extract
¼ tsp. allspice
¼ – ½ tsp. cinnamon
3 tbsp. butter, melted

Combine raisins and bourbon in a small bowl. Cover and soak for 1 to 2 hours or until the raisins have absorbed most of the bourbon.

Preheat oven to 350° F.

Pour milk into a large bowl. Add bread and press into milk with your hands or a large spoon until all the milk is absorbed.

In a separate bowl, whisk eggs until frothy. Whisk in sugar, vanilla, allspice, and cinnamon. Pour over bread mixture. Add bourbon-soaked raisins, with or without the remaining soaking liquid. Stir gently to combine.

Pour melted butter onto bottom of a 9 x 13-inch baking pan. Coat the bottom and the sides of the pan well with the butter. Pour in bread mixture then egg mixture.

Bake 35 – 45 minutes, until liquid has set. The pudding is done when the edges are just brown and pulling away from the pan edge.

Bourbon Sauce
½ cup (1 stick) butter, melted
1 cup sugar
1 large egg
½ cup Kentucky bourbon whiskey, amount according to taste

Make the bourbon sauce while the bread pudding is cooking.

Melt butter in a saucepan on low heat. Whisk in sugar and egg. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon. Remove pan from heat.

Do not allow mixture to simmer! Or the sauce will curdle. By the way, if your sauce curdles, just take it off the heat and blend it smooth in a blender.

Whisk in bourbon. Whisk again before serving. The sauce should be soft, creamy, and smooth.

Serve with whiskey sauce on the side. This dessert is best eaten the day it is made.

Recipe and a Read: Cream Cheese Mini-Cakes and a Time Travel Romance by Author Stella May...

These little taste treats are my own creation. It is an easy and skinny version of individual cheesecakes, yet still packed with plenty of flavor. This recipe makes one dozen little cakes. Dress them up with a bit of fruit on top after baking and you're good to go. Sorry, there's no picture. Those two rascals I live with ate them too fast.

Cream Cheese Mini-Cakes

1 package farmer’s cheese
1 package Philadelphia cream cheese
2 eggs
½ cup sour cream
⅓ cup sugar
1 tsp. vanilla extract
½ cup almond flour
½ tsp. baking powder 

Remove cheeses from refrigerator 2 hours before making this recipe. They both need to be at room temperature to cream properly. 

Place cheeses in a large bowl. Mix on a low speed with an electric mixer until creamed. 

Add eggs, sour cream, sugar, and vanilla. Increase mixer speed to blend well. Pour in almond flour and baking powder. Combine well. 

Pour mixture into muffin tins lined with cupcake papers or do like me and use a silicone form for cupcakes. You’ll need to lightly oil it. 

Pre-heat oven to 350° F. 

Very important: put a medium-sized bowl filled with water on the bottom of your oven. 

Bake 35-40 min, or until golden brown.

Let the Summer Long Weekend Season Start with Ice Cream Cake by Helen Carpenter...

The month of May ushers in the start of the long weekend season for Canadians and Americans. Ah, warmer weather and longer days await! First up is Victoria Day weekend, followed by Memorial Day weekend. These two back-to-back holiday weekends may celebrate differently, but you can be sure ice cream is on the menu at some point over these holidays. So, I've virtually flown in my author friend Helen Carpenter up from Florida to whip up a little something sweet and cool to enjoy with family and friends. The best part? This recipe is no bake. That's another reason to celebrate! The kitchen is all yours, Helen...

If you like to have dessert on hand for those daily ice cream craving family members or guests, this cake keeps well in the freezer. It’s expandable, too. Just use a bigger pan, more ice cream and extra whipped topping. When it comes to ice cream, more is better, right?

No Bake Ice Cream Sandwich Cake

What you’ll need:
One package (12 bars) of ice cream sandwiches
One container (8 ounces or larger) of whipped topping (or make your own with a pint of whipping cream and 3 tablespoons of sugar)
Garnish of your choice: Sprinkles; chopped nuts; caramel, chocolate or other syrup
Glass or plastic pan with a lid

Directions:
Arrange six ice cream bars in a crisscross pattern in the bottom of the pan. (You may have to cut the bars to make them fit. Of course, then you’ll need to eat those little left-over pieces—who said chefs have an easy life?)

Spread a layer of whipped cream over the bars. *

Crisscross the remaining six ice cream bars on top of the whipped cream.

Slather another layer of whipped cream over the top and sides.

Decorate with sprinkles or chopped nuts, or drizzle with caramel or chocolate syrup.

Cover and freeze 2-3 hours or overnight.

Remove from freezer 10-15 minutes before serving to soften.

*For a richer cake, add a layer of syrup and/or chopped nuts over the whipped cream.

Author Stella May's Delicious Treats and her latest Time Travel Romance Read are on the Menu this Easter...

I've got fellow time travel author and friend, Stella May in my virtual kitchen today, baking up some of her delicious Almond Meringue Cookies just in time for Easter. Perfect to serve at your family gatherings, or tuck into your children's Easter baskets, these sweet treats won't disappoint, but will disappear! So, without further ado, I'm handing off the spatula. Take it away, Stella...

This recipe for a classic meringue dessert is easy to prepare and wonderful to eat. My family loves these cookies as a sweet after a good dinner. If you choose to use vanilla extract, you’ll have a classic méringue desert called La Bise (kiss in French). Bon appetite! 

Almond Meringue Cookies
4 egg whites, cold eggs right from the fridge
Pinch of salt
¾ or 1 cup of white sugar (I use organic raw cane sugar)
1 tbsp. almond or vanilla extract
12 whole almonds

Preheat oven to 200° F.

You need a hand or standing mixer. Mix egg whites and salt on high-speed to the consistency of dense foam.

Add sugar by small portions, mixing well. Try not to stop your mixer while adding sugar. Add almond extract.

Cover cookie sheet with parchment. Spoon mixture into 12 cookies. You can use an ice-cream scoop.  Place one whole almond on top of each cookie.

Bake for 1 hour. Lightly touch the cookie. It will have a firm crust and a soft center. That’s ideal. Turn off the oven and leave the cookies inside the oven for 1 hour.

Remove from the oven to cool completely. Enjoy!

The Perfect Dessert for Victoria Day Weekend: Cupcake Fantasy by Author Helen Carpenter...

The day was perfect; one of those low humidity, blue sky, breeze-off-the-lake days that made tourists flock to central Florida. Green and yellow tents filled the park and costumes were the attire of choice. Dogs in costumes, babies in costumes, teens in costumes, turtles in costumes; every life form Andi encountered wore a costume.

Her own costume was her usual jeans and boots, topped by a red tank and a red cap to match the red linen covering the platter of cupcakes in her hands. This year the cupcakes were salted caramel apple. The recipe was new and the friends who’d taste-tested had raved over them. They were sinfully delicious and should easily be the best cupcakes in the park.

She’d still baked three batches before she was satisfied. Competition in the Cupcake Wars at the annual Cooter Festival was always fierce.

She signed in, took her number, and walked to the table at the end of the tent. To get to her assigned spot, she had to step around a lumbering turtle. The damp lettuce leaf draped over its shell was only partly a costume. The real reason for the decoration was that the turtles—or cooters as the locals called them—were well cared for and the festival organizers were making sure this one stayed cool.

Andi put the cupcakes and her bag on the table and took her place beside a leggy teen. The girl had crafted sugar lily pads, fairy wings, and miniature frogs to go with her mint and chocolate cupcakes. With their pink frosting and blue polka dots, the cupcakes seemed ready for an impish tea party as she positioned them on a miniature tree-shaped stand.

After Andi finished setting her cupcakes on the upended crystal goblets she’d brought, she walked along the exhibit table to greet the other contestants. The confections were as varied as the bakers. Classic vanilla, red velvet, peanut butter truffle, tiramisu, banana walnut, double maple, pumpkin spice—all mouthwateringly scrumptious and worthy adversaries. With luck the proud presenters would not be sore losers.

When the judging began, Andi took her assigned place and handed out samples to the judges. As her friends had proclaimed, her cupcakes got high marks for taste. But when all the votes were tallied, the leggy teen’s presentation won the blue ribbon.

Andi congratulated the young baker and admired the silky ribbon. Then she distributed the rest of the salted caramel apple cupcakes to the passers-by and packed her goblets. As she stepped past the exhibit table, she hooked her boot around the metal leg and tugged. The table tipped. The teen’s beautiful display landed in the dirt with a splat, icing-side down. The other contestants gasped. The lettuce-draped turtle moved in for a taste.

Andi settled her hat more securely over her hair so her horns wouldn’t show and elbowed her way through the crowd.

There might have been better cupcakes than hers in the park that day. But she didn’t think so.

Sinfully Delicious Salted Caramel Apple Cupcakes


Batter

1 stick plus 1 tablespoon butter, softened to room temperature
2/3 cup brown sugar
2 eggs
1 tsp. vanilla
2-3 apples, peeled, cored and finely chopped
¼ cup heavy cream
1 cup flour
1 tsp. baking powder
¼ tsp. salt
1 tsp. pumpkin pie spice

Preheat oven to 350° F.

Put ¼ cup apples and 1 tablespoon butter in a bowl and microwave for 1 minute at 50% power to soften. Mash with a fork (lumps are okay). Let cool.

Cream together the stick of softened butter and brown sugar. Blend eggs and vanilla into the creamed mixture. Add the mashed apples and heavy cream to the batter and mix well.

In a small bowl stir together flour, baking soda, salt, and pumpkin pie spice. Add to wet ingredients and mix thoroughly. Batter will be thick.

Fold chopped apple pieces into batter.

Line a 12-muffin tin with baking cups. Spoon batter evenly into the cups.

Bake 20 minutes.

Let cupcakes rest in pan for five minutes. Transfer to baking rack to cool completely.

Frosting
1 stick of butter
1 cup brown sugar
1/3 cup heavy cream
¼ tsp. salt
2 cups powdered sugar

Melt butter in pot on stove over medium-high heat. Add brown sugar and heavy cream. Stir constantly until sugar is dissolved. Stir in salt.

Let mixture bubble for 2-3 minutes without stirring. Remove from heat. Stir in powdered sugar and mix until smooth.

Frost cooled cupcakes.

Caramel Sauce
1 cup white sugar
¼ cup water
¼ cup butter
2/3 cup heavy cream

Heat sugar and water in pot on stove over medium-high heat, stirring constantly until sugar is dissolved and mixture boils.

Let mixture boil without further stirring until it browns to the color of caramel. Add butter and stir until butter is melted.

Remove from heat. Add heavy cream. Stir until the bubbling stops and the sauce is smooth. Drizzle over cupcakes.

Remaining sauce can be used for other recipes.

For additional flavor, garnish cupcakes with a sprinkle of salt.

Makes 12 cupcakes

Recipe and a Read: Lucky Charms Treats and Bewitching Hannah by YA Paranormal Author Leigh Goff...

 

A witch's familiar is her lucky charm. What is a familiar or a familiar spirit? A familiar is a witch’s mascot; her supernatural spirit companion that takes the form of an animal, but an animal with its own magical powers. This special creature is a guardian and protector, lending support to its witch when needed and, if she is young, guiding her as she comes into her powers.

In witch lore, the creature is usually represented by the oh-so-clever black cat, but the familiar takes a form that best represents the individual nature of the witch. Dogs, birds, and mice are also popular familiars. A familiar can be as small as a butterfly or as big as an elephant. Horses make excellent familiars, too. As an author who writes about witches, I am partial to ravens and crows. They are protective, intelligent birds known for being excellent messengers.

How does a witch choose her familiar? She doesn’t. They choose each other. Sometimes there is a family connection. It is a spiritual partnership with a psychic connection. They are attuned to each other and possess a strong bond. They can communicate without words and interpret each other’s expressions, sounds, and motions. Familiars have an interest in magic-practices and assisting with them.

Famous familiars include…Thackery Binx cat of Hocus Pocus, Salem Saberhagen from Sabrina the Teenage Witch, and Perdu the magical raven in The Witches of New York. I feature Hannah’s beautiful white raven familiar on the cover of Bewitching Hannah. He is her brave messenger, Siris; a name that is a magical palindrome like Hannah.

Today, many witches and Wiccan practitioners have adopted the idea of having a supernatural servant spirit and guardian. Familiars serve as faithful protectors of a witch and her powers. Most importantly, they are loyal to the end.

Speaking of lucky charms, if you’re looking for a sweet treat to pair with one of my bewitching novels, I am including a super simple recipe from Delish.com below.

Best Lucky Charms Treats
½ cup (1 stick) butter, plus more for pan
1 (12-oz.) bag mini marshmallows
½ tsp. kosher salt 
6 cup Lucky Charms

Grease a 9"-x-9" baking dish with butter. 

In a large pot over medium heat, melt butter. Add marshmallows and salt and stir until completely melted. Remove from heat and stir in Lucky Charms. 

Pour into pan and smooth top, being careful not to pack cereal too tightly into prepared dish. Let cool completely before slicing and serving.

EXCERPT
The imposing entrance segued into the main part of the old family chapel. Shadows flickered across the white walls as candlelight streamed down from an ornate iron chandelier cradling clear-colored hurricanes. Angelic sculptures hung between the arched windows and beneath the cloud-painted ceiling that Michelangelo himself would have envied, four wooden pews graced each side of the aisle.

I tiptoed farther in and spotted another black-lined white envelope on the altar. I was definitely in the right place.

My fingers trembled as I traced the letters that formed my name. This was way beyond ordinary, but why and—more importantly—who?

“W?”

A hint of the Shadow’s amber and woods scent mixed with the faint candle smoke of the chapel. “No. Way.” I spun around ready to stomp right out of there.

In that moment, a heavy gaze fell on me and the air felt charged with electricity. I searched right and left, seeing no one. “W? Whoever you are, show yourself.”

“This will be the hardest thing you’ve ever done.” His potent voice reverberated off the walls and seemed to come from everywhere, including the inside of my head.

I locked my wandering gaze on the loft above the entrance where I spotted his silhouette. “Was leaving me in a burning wreck the hardest thing you ever had to do? Was it?” I raised my volume. “Who are you? Why did you leave me for dead?”

His intake of breath was audible. “I would never. I mean. I didn’t want to do that. I don’t.”

“Oh, lucky me.” I stuck my hands on my hips and tapped an impatient foot on the floor. “If you don’t want to finish me off, then you lured me here to do what, exactly?”

“To help you. I want to help you.”

“Ha!” The sarcastic laugh burst out before I could stop it. “You’ve done a bang up job inspiring my confidence and trust in that department.”

He simmered in silence for a moment. “What do I have to do to inspire you to follow my directions?”

Following someone else’s directions was definitely not my strength. I grimaced, but curiosity got the better of me. “What do you want?”

“You read the note.”

His desire to remain in the shadows was increasingly irritating. “I consider myself a very smart girl, so when a guy who left me in a burning car tells me he wants to help me take on a different deadly problem, I have to wonder if he’s not setting me up to fend for myself again. What’s your motive?”

I dropped my eyes to the envelope, turning it to and fro.

“Emme Blackstone is a mutual enemy and means us both harm.” A tinge of anger laced his tone.

The anger, I understood. After all, we were talking about Emme, but there was also a hint of sadness that intrigued me further. “Why do you think Emme means you harm?”
“It’s inevitable—because of what I am.”

What was he besides completely contemptible?

“It’s in her blood and I believe it’s in her destiny to wreak havoc, especially against someone who can challenge her in talent like you can.”

I dropped my hands to my sides, still clasping the enveloping. “Whoa. Like me? You don’t know me. You don’t know anything about me. How could you? I’ve been gone for the last year.”

A chortle caught in his throat. “What’s a year when you come from a bloodline with hundreds of years of history? A history that’s written down and available to certain people with the right—pedigree.”

Confused, I creased my brow as I continued to stare at his silhouette. “Have you been cyber-stalking me on Ancestry.com or something?”

“Hardly.” There was disdain in his voice as if he considered cyber-stalking to be worse than leaving a girl to die.

“Look, whatever you think you know about my family, I’m not like them. I’m not talented, and I don’t want to challenge Emme. I just want to live a normal life. Normal.” My voice escalated. “Do you hear me all the way up there?”

He huffed. “Normal? You don’t get to pretend to be normal when you’re not. It doesn’t work like that. Not in Annapolis. Someone always knows. Someone always unravels your secrets.”

I thought of the Witch’s Grave. I pictured the women’s slender figures dangling from sturdy, gnarled branches. Their tragic endings proved what I already knew. Magic only brought suffering and death. “You make it sound like I don’t have a choice. I’m telling you I do, and I won’t be a part of this.” I stomped my foot hard on the floor.

He shifted from the shadows into a dim ray of light, seething. “You read the note and you know Emme won’t stop. You need my help.”

I glared, trying desperately to make out the details of his face. “I don’t need anything from you.”

“You don’t have to like it, but that doesn’t change the fact that you are a part of this. You know you are or you wouldn’t have come here. However, if that’s how you feel then you should leave.” The cold in his voice crystallized.

My pulse escalated. “Yup. That’s how I feel. And I’m only leaving because that’s what I want to do, not because you suggested it. Bye.” I marched to the door and wrapped my hand around the knob. I yanked it open. From the moment I’d first laid eyes on him, he’d been nothing but trouble. Horrible, awful trouble. Celebrate Summer with a Piece of Chocolatey-Cherry Heaven and a Cottage Country YA Mystery Read...

A real crowd pleaser at small gatherings such as book clubs or intimate bridal and baby showers, this chocolatey, sweet treat will tempt even the most disciplined of us. If cherry is your go-to fruit that makes your mouth think you’ve swallowed a piece of heaven, then read on if you dare to concoct this sinful chunk of bliss.

CHOCOLATE CHERRY CHUNK LOAF

A bit of butter for greasing the loaf pan 
1¼ cups + 1 tsp. all-purpose plain flour 
¼ cup cocoa 
2 tsp. baking powder 
¼ tsp. salt 
¾ cup granulated or caster sugar 
1 cup cherry yogurt 3 large eggs lightly beaten 
1 tsp. vanilla ½ cup mild vegetable oil 
1 cup cherries 
¼ cup sweet chocolate chips 
1 cup walnuts, chopped, use less if you prefer

Preheat oven to 350° F (175° C or 165° for fan ovens, Gas Mark 4).

Grease a 2 lb. (8 ½ x 4 ¼ x 2 ½ inch) loaf pan.

Remove the pits from the cherries and cut each one in half. Place cherries in a small bowl, sprinkle the 1 teaspoon flour over top and toss gently.

Sift 1¼ cups flour, cocoa, baking powder, and salt into a medium bowl.

Stir in sugar, chocolate chips, and walnuts. Set dry ingredients aside.

In a large bowl, whisk together yogurt, eggs, vanilla, and oil.

Add yogurt mixture to dry ingredients. Beat with a wooden spoon until all the flour is mixed in and the batter is smooth.

Gently fold in the flour-coated cherries.

Pour batter into prepared loaf pan. Bake for 40-50 minutes or until cake tester inserted in the center of the cake comes out clean.

Cool in pan for 20 minutes, then remove cake and place it on a wire rack to cool completely.

 THE GLAZE

1 cup icing sugar, confectioner’s sugar 
2 tbsp. maraschino cherry juice 
1 tbsp. water 
Drop of pink food coloring, optional

Pour icing sugar into a bowl. Whisk in maraschino cherry juice.

Gradually whisk in water, a drop or two at a time, until a smooth, drizzle-able consistency is reached.

Whisk in food coloring, if using.

Fabulous Fairy Cakes and an Epic Fantasy Read by Carol Browne...

This delightful dessert is popular in Britain. We call them fairy cakes while my American cousins call them cupcakes. No matter which you say, I am confident you will love this vegan sweet. Add a little food colouring to the icing for a more festive appearance. Sprinkles or candied cake decorations are also a fun addition.

 
FAIRY CAKES

6 tbsp. /90ml oil
1 cup /230ml water
½ cup /55g light brown or coconut sugar
1¼ cups /185g self-rising flour 
1 heaped tsp. /5+ml baking powder
1 ½ oz. /45g cocoa or carob powder

ICING
½ cup /55g icing sugar (confectioner’s sugar)
vanilla essence (vanilla extract) to taste
¼ cup /55g margarine

Preheat oven to 350 F°/180C/gas 4.

Stir oil into water in a medium-size bowl. Beat in dry ingredients with a hand whisk. Roughly 2 mins.

Insert fairy cake (cupcake) papers into a muffin tin. Pour in batter about half way up the paper. Bake 15 mins.

Remove cakes from tin and allow to cool on a rack.

Cream filling ingredients together in a small bowl. Slather onto cakes after they have cooled.

EXCERPT

The night was waning when Elgiva woke, wondering where she was. The dark ceiling of Joskin’s cave hung above her, and everything had a reddish glow, cast by the embers of the fire. She slid from under the fur coverlet, her skin tightening at the loss of its warmth, and searched for her leather sandals.

Something had woken her, something that waited outside the cave. A runnel of dread ran down her spine.

She had an inexplicable sense of impending danger, but it was too insistent to ignore. An unnamed instinct stopped her from alerting her companions. She must face this menace alone.

She left the cave as quietly as she could. Her heart pounded in her throat as she peered between the rowan trees and searched the night. Whatever had awakened her, it beckoned. She held her breath and listened, but her ears detected nothing, save for a silence as dark and empty as an abandoned crypt.

It would soon be daybreak, but the sun had yet to rise, and the dark beyond the cave swarmed with potential horrors. She stepped out from among the rowans, relying on her acute senses to make out her surroundings. An unnatural calm gripped the night and as her sandals whispered against the cold grass, they sounded abnormally loud. She feared they would betray her presence.

After a while, she came to a stop and searched the trees. Thin strands of mist curled along the ground, cold and clammy, like an exhalation of sickness.

She hugged her shoulders, knotted her fingers in the cascade of her hair, and shivered in her ragged robe. All around her, the silence seemed to be drawing into focus.

“Who is it?” Her throat was too dry for her purpose. She swallowed and licked her lips. “Who’s there? I know you’re there. I can . . . I can feel you!”

Feel you.

A flash of silver sliced through the dark, and Elgiva gasped in fear. Her arms came up to shield her face as the beam struck a rock several yards ahead. It exploded with a whoosh and sent up thousands of splinters of light, which fell to the ground and sizzled in the mist.

A shape now stood upon the rock, its form concealed in a black, hooded cloak.

Elgiva clutched the amulet to her breast. Her hands were white with terror. “In the name of Faine, who are you? What sort of trick is this?”

A soft, sly voice spoke back to her. “Why should you fear magic?”

“What do you want?” she pleaded, her voice a croak of fear.

“To see for myself.”

“To see what?”

The dark shape sniggered, but made no answer. Instead, it swept its cloak aside, and a cloud of sparks flew out and covered the ground with beads of light.

Elgiva stepped back unsteadily, resolved to flee.

“Stay!” commanded the creature.

It raised a skeletal hand, and the forefinger swung towards Elgiva and pinned her against the darkness, holding her like a rivet of bone. No elf, no wilthkin, ever owned such a hand. Her legs threatened to buckle beneath her. This had to be a nightmare; she was still asleep in the cave. But no, it was all too real.

“Who are you? What do you want?” she cried. “I have . . . I have an amulet!”

The creature laughed derisively. “I am Death, and I have come for you.”

It began to radiate a sickly green light, enveloping itself in a caul of brilliance that pulsated with force. The light grew in size until the trees behind it were bathed in its angry glare. It reached for Elgiva, like a foul stench creeping along a breeze, and she was helpless. The creature’s power throbbed in the darkness.

Within the taut coils of her fear, her instincts screamed at her to run, but her limbs had turned to stone.

Siriol, Siriol, help me . . . help . . .

With a shriek of glee, the creature increased the throb of its power. Elgiva’s mind was suddenly invaded by an inexplicable force. She became divorced from herself and watched from a great distance, waiting for the horror to unfold.

A Healthy Snack and Romantic Read by Author-Artist Linda Lee Greene...

At my advanced age, a ‘mushy’ bottom pretty much comes with the territory. But to save your baked-goods from the same fate, there is a little trick you can use as a deterrent. Keep reading to find it.

Several months ago, I learned that victims of thyroid disorder, which I have been since the age of 16, should adopt a gluten-free diet. Carbs are also a problem for me. I looked around for a nutrition plan that would best suit my needs. I found it in the Keto Diet. A side benefit is that I am losing weight on this easy diet plan. Now when I look in the mirror, I see promise of the svelte and fit creature I was when young. It is a tremendous incentive to keep on keeping on.

A favorite gluten-free, low calorie, low carbs, high protein dessert that I stumbled upon by fooling with a recipe in Keto in 30 Minutes, edited by Jen Fisch of Ketointhecity.com, is one I call ‘Blueberry-Blackberry Cobbler’. I treat myself to a filling and satisfying 2-inch square of it drenched in icy-cold, Aldis’s Friendly Farms Original 30 calories per cup almond milk on many late evenings. Blue Diamond almond milk is also a good one. Neither of them is thick and greasy like Silk almond milk. Coconut milk works, if it is your preference. And no, this dessert will not go to your hips, unless of course, you gobble down the whole thing in one sitting. 
 
Blueberry-Blackberry Cobbler

¼ cup gluten-cholesterol-sugar-free coconut flour
4 large eggs
4 oz. cream cheese, softened, I prefer Neufchatel, it contains less fat and has a tangy bite to it
1½ tsp. baking powder
¼ cup Erythritol or three packets of Stevia, plant-based, sugar-free sweeteners
1 tsp. vanilla extract (organic, if possible)
1 tbsp. lemon zest (I use four drops of ‘Young Living’ essential lemon oil)
Nonstick butter cooking spray
4 pats butter
¼ cup blueberries
¼ cup blackberries

Pre-heat oven to 425º F.

Combine all ingredients before cooking spray together in a mixing bowl.

Coat the sides and bottom of an 8-inch. x 8-inch baking dish with cooking spray.

Place a thin pat of butter in each corner of the baking dish. Set dish in the oven until butter melt, about 2 – 3 minutes.

The thick batter spoons nicely into the warm baking dish. Now here is the trick to avoid turning your cobbler into a ‘mushy-bottomed-mess.’ Rather than mix your fruit into the batter, spoon blueberries and blackberries onto the top of the batter. You can use any fruit you choose, but be careful, most fruits outside the berry family are high in carbs and will go to your hips.

Bake about 20 minutes.

I whip up this delicious dessert in the evening so I can cut myself a warm square of it right out of the oven. It is a yummy soother to a gnarling, late-night tummy.

Celebrate Summer New Orleans-style with this Tasty Dessert and a Sneak Peek at a Southern Gothic Read by Leigh Goff...

Here is a dessert I confiscated and made my own. This New Orleans treat is perfect on a special night for two as well as holiday gatherings and everything in between.

Here are a few tips to make preparing this dessert easier:

Soak the raisins in bourbon before you start this recipe. You can even soak them a day or two ahead. 

The bread you use should be a little dry. If the bread you are using is fresh, after you cube it, spread it out on a sheet pan and put it in a 200° F oven for 10 minutes.

Go easy on the bourbon sauce. It is strong! But so delicious.

Bread Pudding

1 cup raisins
¼ cup bourbon whiskey
1 loaf French bread, at least a day old, cut into 1-inch cubes
1 qt. milk
3 large eggs
2 cups sugar
2 tbsp. vanilla extract
¼ tsp. allspice
¼ – ½ tsp. cinnamon
3 tbsp. butter, melted

Combine raisins and bourbon in a small bowl. Cover and soak for 1 to 2 hours or until the raisins have absorbed most of the bourbon.

Preheat oven to 350° F.

Pour milk into a large bowl. Add bread and press into milk with your hands or a large spoon until all the milk is absorbed.

In a separate bowl, whisk eggs until frothy. Whisk in sugar, vanilla, allspice, and cinnamon.

Pour over bread mixture. Add bourbon-soaked raisins, with or without the remaining soaking liquid. Stir gently to combine. Pour melted butter onto bottom of a 9 x 13-inch baking pan. Coat the bottom and the sides of the pan well with the butter. Pour in bread mixture then egg mixture.

Bake 35 – 45 minutes, until liquid has set. The pudding is done when the edges are just brown and pulling away from the pan edge.

Bourbon Sauce

½ cup (1 stick) butter, melted
1 cup sugar
1 large egg
½ cup Kentucky bourbon whiskey, amount according to taste

Make the bourbon sauce while the bread pudding is cooking.

Melt butter in a saucepan on low heat. Whisk in sugar and egg. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon. Remove pan from heat.

Do not allow mixture to simmer! Or the sauce will curdle. By the way, if your sauce curdles, just take it off the heat and blend it smooth in a blender.

Whisk in bourbon. Whisk again before serving. The sauce should be soft, creamy, and smooth.

Serve with whiskey sauce on the side. This dessert is best eaten the day it is made.
