Author in the Kitchen: Closing Out the Holidays with Cookbook Author Sloane Taylor...

Now that the holiday madness is almost over it's time for a little comfort food. My daughter Dru, who is a wonderful cook, offered this easy dinner. She is creative in her use of herbs and spices and never fails to come up with a mouthwatering meal that is easy to prepare. This is one of our favorites. Studs and I have prepared many times and will many times more.

DRU’S CHICKEN

½ lb. boneless chicken breasts or tenders
½ tsp. garlic powder
½ tsp. onion powder
½ tsp. dried sage
¼ tsp. dried thyme
1 tbsp. olive oil
1 can cream of chicken soup
1 cup chicken stock, may need a little more
2 cups Minute White Rice
1 small broccoli crown cut into flowerets
Sliced baby bella or white mushrooms to taste 

If using breasts, pound them thin between two sheets of waxed paper. Use tenders right from package

Sprinkle seasonings onto chicken.

Pour oil in a frying pan and heat on medium until is shimmers. Add chicken. Fry until lightly browned, about 5 minutes, turn, and cook the other side the same way. remove chicken from pan to a plate and set aside.

Stir chicken stock into hot pan and scrape in any brown bits from the bottom and sides of the pan.

Add soup, mix well, the bring to a boil.

Stir in rice and broccoli. Turn heat to medium low. Place chicken on top, cover and let simmer about 5 minutes.

Serve on individual plates. French bread is a nice addition.

The Perfect Side Dish for the Holiday Season, and a Taste of my Time Travel Tale...

This is the perfect casserole for any occasion, especially holiday feasts like Thanksgiving, Christmas, and New Year's Day. These super scalloped potatoes compliment any main dish you serve at your table. Tender potatoes in a creamy onion sauce baked to golden perfection would make any mouth water. Whether you’re serving spiral ham, pork chops, poultry or beef, this tasty side-dish makes six servings to share with family, friends, or friends of friends. 

With a prep time of 25 minutes, cook time of 1 hour and 20 minutes, and a rest time of 15 minutes for a total of 1 hour and 45 minutes, you’ve got plenty of time to visit with your company, and enjoy a glass of your holiday favorite libation. Cheers and happy holidays!

Super Side-Dish Scalloped Potatoes

¼ cup butter
1 large onion, diced
2 cloves garlic, minced
¼ cup flour2 cups milk
1 cup chicken broth
½ teaspoon salt
¼ teaspoon pepper
3 pounds of white potatoes, sliced about ⅛” thick
Salt and pepper to taste

Preheat oven to 350°F

Sauce

To make the sauce, melt butter, onion, and garlic over medium-low heat. Cook until onion is softened, about 3 minutes. Add flour and cook for 1-2 minutes.

Reduce heat to low. Combine milk and broth. Add a small amount at a time whisking to thicken. The mixture will become very thick, continue adding a little bit of liquid at a time whisking until smooth.

Once all the liquid has been added, bring to a boil over medium heat while continuing to whisk. Stir in salt and pepper and let boil 1 minute.

Grease a 9 x 13 baking dish. Place ⅓ of the potatoes in the bottom and season with salt and pepper. Pour ⅓ of the cream sauce over top.

Repeat layers ending with cream sauce. Cover and bake for 45 minutes.

Uncover and bake for an additional 35-45 minutes or until golden brown, and potatoes are tender. Broil for 3-4 minutes to obtain a golden top.

Allow to rest for 15 minutes before serving.

This casserole is also a wonderful side-dish to include at your holiday get-togethers too, making a great substitute for mashed or roast potatoes. Try it. You just might love it!

“I wonder what else is down here.” Drake beamed his cell phone across the basement, hitting jars of jams, pickles, and relishes. His stomach growled.

Jordan pulled the cheese from his pocket and handed it to Drake. “Trade you for your phone.”

“Best. Trade. Ever.” Drake passed his phone to Jordan.

Jordan walked over and grabbed a jar of pickles off the dusty shelf. At least they wouldn’t arrive at the baron’s place hungry. He hoped his uncle had managed to stop Amanda’s bleeding. His hand tightened over the jar, the ridges of the lid cutting into his palm. A scrape from behind the shelves made Jordan jump.

“Hello?” he asked, pushing jars aside. He flashed the cell phone into the small, dark area.

“Who ya talking to, Jordan?” Drake asked with his mouth full of cheese.

“Shhh, Drake.” Jordan listened. Hearing nothing, he shrugged and turned back around.

“I thought I heard—” Jordan stopped and pointed the phone at Ravi. His jaw dropped. “A-Are you serious, Sharma?”

Drake spat out his cheese, snorting with laughter.

“Is there a problem?” Ravi asked, tying the bowtie of his tuxedo.

“You look like a penguin with attitude!” Drake slapped his knee.

“Say what you want, but I’m glad we didn’t hit the cleaners on the way to school now,” Ravi replied, pulling down his sleeves, “or else I wouldn’t have these dry clothes.”

Jordan chuckled. Suddenly, he heard a door creak open, followed by heavy footsteps squeaking down the stairs. Panicking, Jordan stuffed Drake’s phone in his track suit jacket’s pocket and waved Drake over by the shelves. Drake slipped behind Jordan just in time, before the small light bulb above the bottom of the stairs clicked on. Jordan swallowed hard. There, staring directly at Ravi was a portly man in a blood-stained apron. Tufts of blond hair sprouted from the sides of his balding head. His brown trousers were pulled up past his waist, making him resemble an evil garden gnome. In one of his hands, he held a huge butcher knife, its blade flecked with blood.

Wielding the knife, the man pointed at Ravi. “Who are you?”

Ravi licked his thick lips nervously. “The name’s Bond. James Bond.”

Thanksgiving Memories and a Cozy Mystery Read by Author Emma Lane...

Thanksgiving is family, food, and thankfulness. It’s when you have this homing urge to join your people over a huge roasted turkey. When you were ten you punched your cousin in the nose for some remark he made. When you were eighteen, you were bored and wishing to be somewhere else, but mom made you stay. When you were twenty-eight, you were setting up the children’s table. And so it goes right down to Grandpa who at 90 announced he didn’t need to watch his cholesterol any more and reached for the butter dish. (I loved it when he did that.) 

Our turkey is carved in the kitchen, makes it easier for serving. But when the grandchildren were young, they always expected that rooster to make an appearance at Thanksgiving. It’s a tradition as such. They are grown-ups now, but they still search the china cabinet for the collection of salt ‘n pepper shakers, each person has his/her favorite set. Our dining room table is custom made wide at the bottom to seat two people comfortably. As a result, I have no matching pad. Straw oversized placemats do an admirable job of protecting the wood surface from the heated dishes. I use a table cloth, but still enjoy the colorful cloth placemats to echo the vibrant Fall colors. With the addition of fruit cups, water glasses, and matching candles, the table arrangement is complete, waiting only for the train of hot dishes and the blessing before the feast is begun.

Turkey for everyone! White for the kids and dark meat for my hubby and me. They have always been convenient preferences. We reserve baked ham for Christmas dinner.  Lima beans (butter beans) for my son, green bean casserole for my daughter. Each person has a favorite. I love yellow squash while my hubby adores sweet potato soufflĂ©. My daughter makes all the pies, usually pumpkin and apple. The grands like the fruit cups that are sometimes surrounded by red Jell-O and sometimes by whipped cream. Dressing??  We make a raison (Crasins substitute) and walnut type topped by a couple of baked chicken parts. The recipe changes almost every time. There is a fresh veggie plate with tomatoes, celery, carrots, and sliced zucchini for nibbling. Other dishes may be added each year. 

 Once I had an idea to bake a mid-sized (huge) Hubbard squash and stuff it with a mixture of squash, onion with a touch of maple syrup topped with scrambled southern style sausage. It was so tasty, but a bear to get to the table. I dropped it from the menu. What memories does your family love each Thanksgiving get together?

Author in the Kitchen: Holiday Brunch Served Up by Cookbook Author Sloane Taylor...

After we entertain Christmas Eve, we tear through the house cleaning up before the kids and grands come for brunch Christmas Day. This meal is wonderful because so much can be prepared well in advance and stored in the fridge until it’s time to cook. 

MENU 
Breakfast SoufflĂ© 
Hash Browns 
Fresh Fruit Salad 
Mini Croissants 
Christmas Cookies & Leftover Desserts 
Mimosas 

Breakfast Soufflé
 
1 lb. (½kg) ham, bacon, or breakfast sausage 
9 eggs, lightly beaten 
3 cups (750ml) milk 
1 tsp. (5ml) dry mustard 
Diced green, red, and/or yellow pepper to taste 
½ lb. (57g) sharp cheddar cheese, grated 
½ lb. (57g) Swiss or Gruyere cheese, or a combination of the two, grated 
Diced onion to taste 
Freshly ground black pepper to taste 
4 – 1 in. (2.54cm) slices Vienna or French bread, cubed 

Preheat oven to 350°F (180°C). 

Dice ham or bacon. If you use ham, set aside in the bowl you use for the eggs. Fry bacon to the crispness you prefer. Drain on paper towels. If you use breakfast sausage, fry meat until no longer pink. Be sure to break up any clumps. Drain meat in a colander while you continue to prepare the soufflé.

Add all ingredients, except bread, to eggs. Stir well. Gently stir in bread. 

Pour mixture into an ungreased 9 x 13-inch (33 x 22cm) glass baking dish. Bake 1 hour or until a knife inserted in the center has no egg clinging to it. 

This dish can be assembled one or two days ahead of time. On serving day allow the soufflĂ© to sit on your counter 1 – 2 hours before you bake it. 

Leftovers are excellent from the microwave. 

Hash Browns 
If you need to increase the hash browns recipe for a larger group of people, it’s best to sparingly add more garlic powder. As is this recipe serves 6. Leftovers reheat beautifully. 

3 russet potatoes (about 1½ pounds), peeled 
1½ tsp. (7.5ml) garlic powder, not salt 
Freshly ground pepper, to taste 
¼ cup (60ml) extra virgin olive oil 

Shred potatoes on the large holes of a box grater or use the coarse grater disk on a food processor. Transfer them to a bowl of cold water. Allow them to soak for 2 minutes. Drain in a colander and then rinse under cold water. You do this to remove the starch that makes hash browns gummy. 

Transfer shreds to a kitchen towel. Gather together ends of towel and twist over sink, squeezing firmly to wring out as much liquid as possible. This step creates crisp hash browns. Transfer potatoes to a medium bowl and toss with garlic powder and pepper. Be sure to evenly distribute the seasonings. 

Heat olive oil in a large skillet over medium heat. Add potatoes, press down to form a thin layer and cook for a minute or two. Stir and then press down again. Cook until a dark golden crust forms, about 5 minutes. 

Turn potatoes in sections. This is easier than trying to turn the food as a whole. Continue to fry until hash browns are crisp and browned all over, 5 minutes or so. Transfer to paper towels to absorb excess oil. 

Fresh Fruit Salad 
1 banana, peeled 
1 pear, cored 
1 tbsp. (15ml) lemon juice 
¼ pineapple, peeled, cored, and diced 
1 kiwi, peeled and sliced 
10 seedless red grapes, halved 
10 blueberries 
10 raspberries, optional 

Slice banana into bitesize pieces. Scoop into a medium-sized bowl. Dice pear and add to bowl. Sprinkle lemon juice over fruit to stop it from turning brown and mix well. 

Gently fold in remaining fruit. 

Spoon into a glass bowl, cover with cling wrap, and chill until time to serve. Leftovers are still good the next day.

Mimosas 
1 bottle sparking white wine or champagne, cold 
1 carton orange juice, cold 
Tall slender glasses 

Fill glasses half full with wine. Tip the glass slightly as you pour to retain the fizz. Top off with orange juice. Don’t stir. That will destroy the bubbles.

Author in the Kitchen: A Quick and Easy Easter Dinner Served by Cozy Mystery Author Emma Lane...

Easter will be here soon, so I took the liberty of inviting Bestselling Author Emma Lane, who also writes under the pen names Janis Lane and Sunny Lane, into my virtual kitchen to celebrate the upcoming holiday with me and my readers. So, let's dole out the chocolate bunnies, and get this Easter celebration started! The stove is on, and the oven is preheating. Get that apron on, and do your thing, Ms. Emma...

My goal is to serve food with as little fuss as possible while still producing an attractive, delicious, and healthy meal for my family and guests. Hopefully this plan will give me more time to enjoy everyone.  I encourage you to add your own favorites. 

MENU
Baked Ham
Raisin Sauce
Candied Carrots
Ambrosia
Dinner Rolls
Peaches al la Mode


Ham

Hams are already cooked you merely want to warm it through. Follow the package directions so as not to dry out the meat.

Raisin Sauce
1 ½ cups water
¾ cup raisins
⅓ cup packed brown sugar
1 pinch salt
1 tsp. cornstarch

     Bring water to a boil in a saucepan. Stir in raisins, then boil until raisins are very tender, 5 minutes. 

Whisk in brown sugar and salt, then gradually whisk in cornstarch to avoid lumps forming. Simmer over low heat until glaze has thickened, 10 minutes.

Serve in a gravy boat for your family and friends to spoon onto their ham.

Candied Carrots


Are always a favorite. This recipe works great in your
 microwave.

5 – 8 baby or mini carrots per person
2 tbsp. butter
2 tbsp. brown sugar
Dash of maple syrup ¼ cup water
Parsley for garnish, optional

Cut carrots in half or thirds into long pieces.

Mix remaining ingredients in a microwave safe bowl. Stir in carrots. Nuke until carrots are fork tender. Careful not to overcook. Spoon sauce over carrots before serving.

Ambrosia

I have mentioned before I am originally from the south of the U.S. Oranges and coconut mixed together is Ambrosia in South Georgia. Use a pretty glass bowl if you have one. I use my mother’s cranberry bowl and love the contrast of the bright orange colors. This is a messy recipe to prep as you must remove the orange membrane. Do prepare the dish the day before and refrigerate to really blend the flavors.

1 orange per person if small, ½ if large
1 cup shredded sweetened coconut
¼ cup orange juice
1 small can crushed pineapple

Stir all ingredients together then scoop into a serving bowl.  

Canned biscuits or Crescent Rolls

Follow the recipe on the package.

Peaches a la Mode
1 can sliced peaches in light syrup
Vanilla ice cream
Granola, optional
Maraschino cherries
Cherry juice

Spoon 3 – 5 peach slices in individual dessert dishes. Add a generous double scoop of vanilla ice cream. Top with a maraschino cherry and a sprinkling of granola. Drizzle sparingly with cherry juice.

Other fruits are also tasty prepared this way.

Author in the Kitchen: A Festive Cake Fit for a King and a Romantic Comedy Read by Catherine Castle...

Two years ago in late December, I discovered almond paste and went down a cake rabbit hole. My family celebrates Christmas on New Year’s Day most years, but that year we were celebrating after January 6, which is Epiphany. Epiphany is the traditional date the Wise Men visited the Christ Child, and to celebrate the event a special cake, with a plastic baby or bean hidden in the cake, is served. The Epiphany cake, often referred to as a King cake or the Three Kings cake, has many forms, flavors, and even many trinkets hidden in it. It is also a tradition in many countries, especially those with a Catholic background. 

I’d never heard of a King cake, except in reference to Louisiana Mardi Gras celebrations. After some research, I decided to come up with my own version of an Epiphany King cake using almond paste. It took several tries to create something that showed off the frangipane I’d made with almond paste. On my first attempt, using a yellow cake recipe, the frangipane melted into the cake batter and didn’t give me the definition I wanted.   

So I began experimenting. I decided I’d make a chocolate spice cake with a frangipane layer. That worked. I’m calling it Epiphany Frangipane Chocolate Spice Cake. If you don’t want to make it an Epiphany cake, complete with trinkets, just call it Frangipane Chocolate Spice Cake. Here’s a tip I learned the hard way - be sure to make the frangipane first! 

Also, you may want to consider adding the following: 

·       1 bean, or 1 plastic small baby figurine, or several small trinkets. Be sure to tell your guests these items are hidden in the cake!

·       Chopped maraschino cherries or chopped candied fruit for decorating the cake. You can add the chopped candied fruits to the baking pan before you add the batter, scattering them evenly around the pan, or you can reserve them and scatter them over the top of the baked cake adhering them to the cake with a bit of confectioner sugar glaze. 

Frangipane Chocolate Spice Cake 
Cake
2½ cups sifted cake flour
2 cups granulated sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. ground nutmeg
1 tsp. ground cloves
3 tbsp. cocoa
1 cup shortening
1 tsp. vanilla extract
1 cup buttermilk, divided
4 eggs, room temperature 

Preheat oven to 350° F.  

Combine flour with spices and cocoa in a large bowl. 

In another bowl, cream shortening until fluffy. Add 1 cup sugar and mix again, then add 1 cup flour and spices. Mix and beat until combined, adding vanilla and ¾ cup buttermilk, ¼ cup at a time, as needed to make batter mixable. 

Add remaining flour, sugar, and buttermilk until combined. Beat 2 minutes on medium speed. Keep batter scraped down from sides and bottom on bowl while beating. 

Add eggs and remaining buttermilk. Beat 2 more minutes on medium. 

In a lightly buttered, easy-release Bundt pan, gently pour 2 cups of batter into cake pan, smoothing out until batter is level if necessary. 

Almond Cream Frangipane
½ cup (1 stick) unsalted butter, softened
½ cup granulated sugar
2 eggs, room temperature
¾ cup almond flour
2 tbsp. all-purpose flour
2 tsp. vanilla extract
1 tsp. almond extract 

Add all ingredients into a mixing bowl. Combine ingredients on medium, then on high until fully combined. Refrigerate frangipane until cake batter is ready. 

Drop frangipane by teaspoonfuls onto batter, taking care to center in in batter. Or alternately you could pipe frangipane onto batter. 

Gently cover frangipane with 1½ cups batter, leveling out if necessary. 

Add another layer of frangipane in same manner as before. 

Cover with 1½ cups cake batter. 

Put upper rack in the lower third of oven. Bake cake for 60-65 minutes or until wooden skewer inserted in cake comes out clean. You need a long skewer, not just a toothpick to test for doneness. 

Cool pan upright for 5-10 minutes. Invert onto a wire cooling rack, Cool cake completely on wire rack. 

Note: You will have extra batter and frangipane with this recipe. To use remaining mixes, make cupcakes. 

Spoon ⅛ cup batter into a cupcake line. Top with 1 teaspoon frangipane, centering it in batter.

Cover frangipane with another scant ⅛ cup batter. Bake at 375° F for 35 minutes or until

toothpick inserted in cupcake comes out clean.

The Perfect Pairing for Good Friday: Baked Fish and Hush Puppies by Author Helen Carpenter...



Fellow cooks, the time is now—the time to flop your fish out of the frying pan and into the oven, that is. Sure, deep-fried candy bars have a place in every healthy diet. But on days besides Fryday, you might want to make a meal using that other appliance that takes up space in your kitchen.

You can start with this oven-baked version of a recipe that's usually fried. We promise the end result is every bit as delicious. And remember, you can always deep-fry a Twinkie for dessert.

Baked Fish and Hush Puppies

3 pounds fresh fish fillets or strips (we used pollock)
2 tbsp. butter
½ box Cajun seafood fry mix or fish seasoning mix of your choice (or less spicy version, use ¼ of a box)

Preheat oven to 425° F.

Set baking pan in oven until the pan is warm (not hot). Remove pan from oven. Put butter on pan, let melt and spread over pan.

Pour Cajun seasoning mix in a large plastic bag. Add fish and then shake gently to coat evenly. Remove fish from bag, place on buttered pan. Bake for 15 minutes or until fish is flaky.

Hush Puppies
For the baked hush puppies (makes 12 mini pups)
Cooking spray
⅔ cup cornmeal
⅓ cup flour
1 tsp. baking powder
1 tsp. onion powder
1 tsp. garlic salt
¼ tsp. black pepper
⅓ cup coconut milk
1 egg
1 tbsp. oil

While the fish is baking, coat a mini muffin tin with cooking spray.

Measure dry ingredients in a bowl and mix with a fork. Add wet ingredients and stir with fork until blended. Spoon the batter into the muffin tin.

Remove the fish from the oven and turn the oven up to 450°F.

Bake the hush puppies for 10 minutes or until a tester pick comes out with a few moist crumbs.

Serve fish and hush puppies with ready-made coleslaw.

Tips and Tricks
If the fish you're using is not moist, dipping the fillets into milk or water before coating with seasoning will help the seasoning mix stick.

For the hush puppy recipe, you can substitute full-fat cow milk for the coconut milk.

Coleslaw helps cut the effect of the spiciness of the Cajun seasoning on your tongue, but potato salad is a good substitute.

Dress Up the Holiday Season with this Tasty Chocolate Caramel Cheesecake and Relax with a YA Time Travel Adventure Read...

Talk about a dessert that delivers, this divine cheesecake takes…well, takes the cake! Whether you’re hosting the party or on board to bring something tasty, this dressed up treat will make heads turn, and mouths water. Perfect for holiday gatherings or celebrations, with a total prep and bake time of 5 hours and 30 minutes (includes refrigeration), this cheesecake easily serves a crowd of sixteen of your closest cohorts. 

Toblerone Caramel Cheesecake

1¼ cups Oreo Baking Crumbs
¼ cup butter, melted
3 packages (250 g/8.82 ounces each) brick cream cheese, softened
¾ cup packed brown sugar
1 tablespoon vanilla
3 eggs
⅓ cup caramel ice cream topping
1 bar (100 g/3.52 ounces) Toblerone Swiss Milk Chocolate, coarsely chopped 

Preheat oven to 350° F. 

Mix crumbs and butter in a small bowl. Press mixture onto bottom of 9-inch springform pan. 

Beat cream cheese, sugar, and vanilla in large bowl with electric mixer until well blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust. 

Bake 40-45 minutes or until center is almost set. Run knife around rim of pan to loosen cake. Cool cake before removing rim. Refrigerate 4 hours. 

Spread caramel topping over cheesecake just before serving. Garnish with chopped chocolate. Enjoy!

Suddenly, a radiant white light beamed from the archway like a lighthouse beacon. Drake hooded his eyes. Amanda grimaced, cradled her stomach, and fell to her knees. Perspiration beaded across her forehead while she fumbled for the Timekeepers’ log in her purse. Amanda pulled a thin, pencil-like writing instrument Lilith called a crystal chalkis out of the log’s spine, and opened the log. Her left hand jumped across the page, scrawling at an incredible rate. Amanda’s breathing became labored. She tossed the crystal chalkis and Timekeepers’ log aside, and lurched to vomit across the lawn. 

“What the—” Jordan crouched to steady her. “Amanda? Are…are you okay?” 

Treena heaved. “Oh, I don’t do pity puke well.” 

“Neither do I,” Ravi said, puffing his cheeks. “I can’t unsee or unhear that.” 

A sharp whoosh—like the sound of a spaceship’s door opening on a science fiction television show—made Drake glance into the archway. Lilith appeared with her arms open wide, and a slight halo around her slim body. The shimmering, dark blue sleeveless dress she wore billowed as if a great force rolled in behind her.  

“Greetings, Time...” Her sea blue eyes widened. “Amanda, let what you feel pass. They are old emotions embedded into the vibration of your new mission.” 

“Embedded emotions?” Drake asked. “Is that like those haunted imprints we experienced in our last Timekeeper mission?” 

Melody grabbed the garden hose and rushed over to Amanda. “John, please turn on the tap.” 

“Hang in there, Amanda, the cool water will make you feel better,” the Prof said. 

Lilith clasped her hands together, and nodded, making the numerous quartz crystals holding up her blond hair quiver. “Yes, Drake, but worse. These haunted imprints go deeper.” 

A terrible ache spiked through Drake’s stomach. He picked up the opened Timekeepers’ log, swallowed hard, and read aloud, “April 8th, 1855—Fields of blood bathe the deep south’s soil as a race of people continue to toil. Broken in body, but not in soul, they wait for a King to make them all whole. 

Drake stuffed the crystal chalkis into the spine of the Timekeepers’ log. He imagined wearing the standard issue red uniform of a crewman in his favorite space show. The crewman who always gets killed by the end of the episode. Was this a call of duty or a suicide mission? Drake’s belly burned. Now he wanted to puke too.

Celebrate Good Friday with Salmon Patties and a Sweet Romance Read by Catherine Castle...

I thought it would be nice to share a homey meal of salmon patties with you today. This is my mother’s recipe, and quite frankly, I love it so much that I always put a few patties aside for breakfast. I even eat them cold. As kids, and when I could eat more carbs, these were served with white rice and gravy made from the oil and pan drippings. Nowadays I choose a more carb friendly side. I hope you’ll enjoy these.

Mom’s Salmon Patties
1 - 15 oz. can of pink salmon
2 eggs, lightly beaten
½ cup finely diced onion
1 cup finely diced celery
¼ cup yellow cornmeal
1 – 2 tbsp. vegetable oil 

Drain salmon, leaving bones and skin in bowl. Add eggs and veggies and mix well. Add cornmeal and mix well.

Heat oil in skillet until it shimmers. Form patties using a 2-inch diameter spoon and fry in oil until golden brown on both sides. It may take 2 batches to cook all patties and you may need to add a bit more oil as they fry. Keep patties warm in a low temperature oven while your second batch cooks.

Makes 12 patties
